A traditional southern recipe that can always be found on my Derby table is benedictine. I know that sounds like either a poison or a monk, but it’s really a dip using cucumber and cream cheese as its main ingredients. It was made popular in a Louisville restaurant called Benedict’s many, many years ago. Benedictine is very refreshing, and if you use fat free cream cheese, it isn’t high in calories. Keep in mind, though, that if you do use fat free cream cheese, the dip won’t be as thick.
