\u00a0In <a title=\"Afternoon Tea, Chez Moi\" href=\"http:\/\/the2seasons.com\/2012\/04\/25\/afternoon-tea-chez-moi\/\">yesterday&#8217;s blog<\/a>\u00a0I promised to share the recipe that I used to make Madeleines. \u00a0I got the recipe from my BFF. \u00a0Well, actually, she isn&#8217;t my girlfriend, but I wish she could be\/would be my girlfriend. \u00a0She happens to be Ina Garten, more commonly known as <em>The Barefoot Contessa<\/em>, and like all of her other recipes, this one is pure perfection. \u00a0I&#8217;ve noticed that when you tell someone you are serving Madeleines, his\/her face lights up.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" src=\"http:\/\/lh4.googleusercontent.com\/public\/XYcVYl7FlsDqSO2Lc6X29vep05LTH69FXZHoTlYIv9iYa_UY43LrTIXMbYJ6OaUxfw_GuQRrSmb5AK2uk6SgeYpzpLReJpXCGlGVYWSYPohn3bwlwpEXOEWaGR35npGHdwnZ00APoo0Q5_SC7kY5qUSIk3SvGa85WFJ19DJfK8Mqwd4jqZXKIw\" alt=\"Chicago Metallic 26631 12-Cup Nonstick Madeleine Pan\" \/><\/p>\n<h3 style=\"text-align: center\"><\/h3>\n<h3 style=\"text-align: center\">The thing you need to remember about Madeleines is that you need a pan like this, so that each little cookie will look like a little sea shell. \u00a0You can find them at <a href=\"http:\/\/www.williams-sonoma.com\/products\/nonstick-madeleine-pan\/?pkey=e%7Cnonstick%2Bmadeleine%2Bpan%7C3%7Cbest%7C0%7C1%7C24%7C%7C1&amp;cm_src=PRODUCTSEARCH||NoFacet-_-NoFacet-_-Top_Wide_Agrarian%20-%20copy-_-\">here<\/a> for sure, and<a href=\"http:\/\/www.amazon.com\/Chicago-Metallic-26631-Nonstick-Madeleine\/dp\/B00134LXEY\/ref=sr_1_1?ie=UTF8&amp;qid=1335476774&amp;sr=8-1\"> here<\/a>. \u00a0They come in regular and non-stick finishes.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><a href=\"http:\/\/the2seasons.com\/2012\/04\/26\/madeleines-as-promised\/img_2317\/\" rel=\"attachment wp-att-9655\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-9655\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2317-1024x681.jpg\" alt=\"\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2317-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2317-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/a><\/p>\n<h3 style=\"text-align: center\">My cookies turned out really nice and yellow because Mr. Autumn bought some farm-fresh eggs at the organic farm for me, and the yolks were absolutely golden.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: left\"><\/h3>\n<h3 style=\"text-align: left\">MADELEINES<\/h3>\n<ul>\n<li>\n<h3>1 1\/2 tablespoons melted butter, to grease the pans, plus 1\/4 pound (1 stick)\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/butter\/index.html\">unsalted butter<\/a>, melted and cooled<\/h3>\n<\/li>\n<li>\n<h3>3 extra-large eggs, at room temperature<\/h3>\n<\/li>\n<li>\n<h3>2\/3 cup sugar<\/h3>\n<\/li>\n<li>\n<h3>1\/4 pound butter<\/h3>\n<\/li>\n<li>\n<h3>1 teaspoon pure\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/extracts\/index.html\">vanilla extract<\/a><\/h3>\n<\/li>\n<li>\n<h3>1 cup\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/flour\/index.html\">all-purpose flour<\/a><\/h3>\n<\/li>\n<li>\n<h3>1\/4 cup\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/cornstarch\/index.html\">cornstarch<\/a><\/h3>\n<\/li>\n<li>\n<h3>1\/2 teaspoon baking powder<\/h3>\n<\/li>\n<li>\n<h3>1\/4 teaspoon kosher salt<\/h3>\n<\/li>\n<li>\n<h3>1\/3 cup sweetened shredded coconut (I omitted the coconut).<\/h3>\n<\/li>\n<li>\n<h3>Confectioners&#8217; sugar, optional<\/h3>\n<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<div>\n<h3>Preheat the oven to 375 degrees F. Thoroughly butter and flour the madeleine pans.<\/h3>\n<h3>In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs, sugar, and vanilla on medium speed for 3 minutes, or until light yellow and fluffy. Add 1\/4 pound of butter and mix. Sift together the flour, cornstarch, baking powder, and salt, and stir into the batter with a rubber\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/spatula\/index.html\">spatula<\/a>. Stir in the\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/coconut\/index.html\">coconut<\/a>.<\/h3>\n<h3>With a soup spoon, drop the batter into the pans, filling each shell almost full. Bake the madeleines for 10 to 12 minutes, until they spring back when pressed. Tap the\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/madeleine\/index.html\">madeleines<\/a>\u00a0out onto a baking pan lined with parchment paper and allow to cool.
