\u00a0This is the real McCoy with freshly squeezed lemon juice. \u00a0For some reason lemons mean spring to me. \u00a0I guess because my mother always made lemon meringue pies each year for Easter. \u00a0So, this year, even though it was just Mr. Autumn and I, I followed the family tradition.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/the2seasons.com\/2012\/04\/12\/real-lemon-meringue-pie\/img_2082\/\" rel=\"attachment wp-att-9368\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-9368\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2082-1024x854.jpg\" alt=\"\" width=\"614\" height=\"512\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2082-1024x854.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2082-387x323.jpg 387w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\"><\/h3>\n<h3 style=\"text-align: center;\">I used a recipe from the <strong><em>Better Homes and Gardens Pies and Cakes<\/em><\/strong>\u00a0book. \u00a0It was a wedding gift from my third grade teacher, and in June we will celebrate 40 years. \u00a0I guess it&#8217;s safe to say the recipe is tried and true.<\/h3>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center;\"><\/h3>\n<p style=\"text-align: center;\"><a href=\"http:\/\/the2seasons.com\/2012\/04\/12\/real-lemon-meringue-pie\/img_2087\/\" rel=\"attachment wp-att-9369\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-9369\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2087-1024x681.jpg\" alt=\"\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2087-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/04\/IMG_2087-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\"><\/h3>\n<h3 style=\"text-align: center;\">I have often doubled the recipe so that the filling and the meringue would be double thick, but since it was for just the two of us, I decided to make a single recipe.<\/h3>\n<h3 style=\"text-align: center;\">*****<\/h3>\n<h3 style=\"text-align: left;\"><strong>LEMON MERINGUE PIE<\/strong><\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 1 1\/2 cups sugar<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 3 tablespoons cornstarch<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 3 tablespoons flour<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; Dash of salt<\/h3>\n<h3>\u00a0&#8211; 1 1\/2 cups hot water<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 3 slightly beaten egg yolks<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 2 tablespoons butter or margarine<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 1\/2 teaspoon grated lemon peel<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 1\/3 cup fresh lemon juice<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 1 baked pie shell<\/h3>\n<h3 style=\"text-align: left;\">\u00a0&#8211; 1 recipe of meringue<\/h3>\n<h3 style=\"text-align: left;\">In saucepan, mix first 4 ingredients; gradually add hot water, stirring constantly. \u00a0Cook and stir over high heat till mixture comes to boiling. \u00a0Reduce heat; cook and stir 2 minutes. \u00a0 Stir small amount of hot mixture into egg yolks, then return it all to the pan. \u00a0Bring to a boil and cook 2 minutes longer, stirring constantly. \u00a0Add butter and lemon peel. \u00a0Slowly add lemon juice, mixing well. \u00a0Pour into cooled pastry shell. \u00a0Top with meringue and bake at 350 degrees 12 &#8211; 15 minutes. \u00a0Cool before serving.<\/h3>\n<h3 style=\"text-align: center;\">*****<\/h3>\n<h3 style=\"text-align: center;\"><\/h3>\n<h3 style=\"text-align: left;\"><strong>MERINGUE<\/strong><\/h3>\n<h3 style=\"text-align: left;\"><\/h3>\n<h3 style=\"text-align: left;\">Beat 3 egg whites that are at room temperature with 1\/2 teaspoon vanilla and 1\/4 teaspoon cream of tartar till soft peaks form. \u00a0Gradually add 6 tablespoons of sugar and beat till mixture is stiff. \u00a0Spread onto pie filling and bake at 350 degrees for 12 &#8211; 15 minutes.<\/h3>\n<h3>Take care.<\/h3>\n","protected":false},"excerpt":{"rendered":"<p>I used the word Real in the headline because this is not the lemon pie that we make from that little box. \u00a0Nope!
