{"id":8686,"date":"2012-03-08T17:04:00","date_gmt":"2012-03-08T22:04:00","guid":{"rendered":"http:\/\/the2seasons.com\/?p=8686"},"modified":"2012-03-08T17:10:12","modified_gmt":"2012-03-08T22:10:12","slug":"spinach-pie-for-meatless-friday","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=8686","title":{"rendered":"Spinach Pie for Meatless Friday"},"content":{"rendered":"<h3>I had a chance to catch a new episode of \u00a0<em>The Barefoot Contessa<\/em> last Saturday, and she had some great recipes. \u00a0It was Jeffrey&#8217;s birthday (again), and she prepared some Greek dishes because he wants to go to Greece, and a trifle because he didn&#8217;t want a regular birthday cake.<\/h3>\n<h3>The spinach pie and hummus that she made looked so good that I made them both for my husband that night for dinner. \u00a0And, it wasn&#8217;t even his birthday. \u00a0Today I&#8217;m sharing her recipe with you because it was delish, and it&#8217;s a great meal if you are opting to not eat meat during Lent.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/the2seasons.com\/2012\/03\/08\/spinach-pie-for-meatless-friday\/img_1868\/\" rel=\"attachment wp-att-8687\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-8687\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/03\/IMG_1868-1024x681.jpg\" alt=\"\" width=\"491\" height=\"327\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/03\/IMG_1868-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/03\/IMG_1868-430x286.jpg 430w\" sizes=\"(max-width: 491px) 100vw, 491px\" \/><\/a><\/p>\n<h3>THE BAREFOOT CONTESSA&#8217;S SPINACH PIE<\/h3>\n<h3><\/h3>\n<ul>\n<li>\n<h3>2 to 3 tablespoons\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/olive-oil\/index.html\">olive oil<\/a><\/h3>\n<\/li>\n<li>\n<h3>2 yellow\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/onion\/index.html\">onions<\/a>, diced<\/h3>\n<\/li>\n<li>\n<h3>5 bunches scallions, chopped<\/h3>\n<\/li>\n<li>\n<h3>1 cup fresh\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/dill\/index.html\">dill<\/a>, chopped<\/h3>\n<\/li>\n<li>\n<h3>1 teaspoon ground\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/nutmeg\/index.html\">nutmeg<\/a><\/h3>\n<\/li>\n<li>\n<h3>1 teaspoon black pepper<\/h3>\n<\/li>\n<li>\n<h3>1\/2 teaspoon salt<\/h3>\n<\/li>\n<li>\n<h3>6 pounds\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/spinach\/index.html\">spinach<\/a>, chopped<\/h3>\n<\/li>\n<li>\n<h3>4 pounds\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/feta\/index.html\">feta cheese<\/a>, crumbled<\/h3>\n<\/li>\n<li>\n<h3>7 large\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/eggs\/index.html\">eggs<\/a><\/h3>\n<\/li>\n<li>\n<h3>2 pounds phyllo dough (I used regular pie dough)<\/h3>\n<\/li>\n<li>\n<h3>2 pounds butter, melted<\/h3>\n<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<div>\n<h3>To a large pot, add the olive oil and saute the yellow onion until brown. Add the\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/scallion\/index.html\">scallions<\/a>, dill, nutmeg, black pepper and salt.<\/h3>\n<h3>Boil the chopped spinach until blanched and still bright green, stirring occasionally. Mix it together with the ingredients in the pot. Add the crumbled feta cheese and the eggs, making sure that the mixture is slightly cool so the eggs don&#8217;t scramble, and mix.<\/h3>\n<h3>Brush the 1 pound of the phyllo\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/dough\/index.html\">dough<\/a>\u00a0with melted\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/butter\/index.html\">butter<\/a>\u00a0piece by piece, layering in a large enough tray to fit the\u00a0<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/phyllo\/index.html\">phyllo<\/a>\u00a0sheets. Then add the mix on top, and piece by piece layer and brush the rest of the phyllo on top.
