{"id":7430,"date":"2012-01-12T18:06:28","date_gmt":"2012-01-12T23:06:28","guid":{"rendered":"http:\/\/the2seasons.com\/?p=7430"},"modified":"2012-01-13T12:02:06","modified_gmt":"2012-01-13T17:02:06","slug":"tuscan-cheese-potato-bake-recipe","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=7430","title":{"rendered":"Tuscan Cheese Potato Bake Recipe"},"content":{"rendered":"<p><em>Author: \u00a0Autumn (Janette)<\/em><\/p>\n<h3>Jordan is guest posting today at <a href=\"http:\/\/www.myuncommonsliceofsuburbia.com\/\">My Uncommon Slice of Suburbia<\/a>. \u00a0Go check out Kristin&#8217;s blog and Jordan&#8217;s post.<\/h3>\n<p style=\"text-align: center;\"><strong>*****<\/strong><\/p>\n<h3>This is a lick your plate clean recipe that I made on New Year&#8217;s Eve for Mr. Autumn and me. \u00a0I found it in a little mailer that <em>Better Homes and<\/em> <em>Garden<\/em> magazine sent my mother. \u00a0I hope you love it as much as we did. \u00a0It is a crowd pleaser, but if there are just two of you, it is great warmed up.<span class=\"Apple-style-span\" style=\"font-size: 13px; font-weight: normal;\">\u00a0<\/span><\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" src=\"http:\/\/images.meredith.com\/bhg\/images\/recipe\/l_R146500.jpg\" alt=\"Tuscan Cheese Potato Bake\" \/><\/p>\n<ul>\n<li>\n<h3><strong>\u00a02<\/strong><\/h3>\n<h3>pounds\u00a0red potatoes<\/h3>\n<\/li>\n<li>\n<h3><strong>3 &#8211; 4<\/strong><\/h3>\n<h3>cloves garlic, minced<\/h3>\n<\/li>\n<li>\n<h3><strong>1 1\/2<\/strong><\/h3>\n<h3>teaspoons\u00a0snipped fresh thyme or 1\/2 tsp. dried thyme, crushed<\/h3>\n<\/li>\n<li>\n<h3><strong>1\/4<\/strong><\/h3>\n<h3>cup\u00a0butter<\/h3>\n<\/li>\n<li>\n<h3><strong>1<\/strong><\/h3>\n<h3>cup\u00a0buttermilk<\/h3>\n<\/li>\n<li>\n<h3><strong>4<\/strong><\/h3>\n<h3>ounces\u00a0fontina cheese, shredded (1 cup)<\/h3>\n<\/li>\n<li>\n<h3><strong>4<\/strong><\/h3>\n<h3>ounces\u00a0Parmesan cheese, finely shredded (1 cup)<\/h3>\n<\/li>\n<li>\n<h3><strong>1\/3<\/strong><\/h3>\n<h3>cup\u00a0crumbled blue cheese<\/h3>\n<\/li>\n<li>\n<h3><strong>1\/2<\/strong><\/h3>\n<h3>cup\u00a0panko (Japanese-style bread crumbs)<\/h3>\n<\/li>\n<li>\n<h3><strong>1\/4<\/strong><\/h3>\n<h3>teaspoon\u00a0dried Italian seasoning, crushed<\/h3>\n<\/li>\n<li>\n<h3><strong>1<\/strong><\/h3>\n<h3>tablespoon\u00a0olive oil<\/h3>\n<\/li>\n<li>\n<h3><\/h3>\n<h3>Snipped fresh parsley (optional)<\/h3>\n<h3><\/h3>\n<h3>*****<\/h3>\n<h3><\/h3>\n<div>\n<h3><strong>1.<\/strong>Preheat oven to 400 degrees F. Lightly grease a 2-quart square baking dish; set aside. Scrub potatoes; cut in 1-inch pieces. In large saucepan cook potatoes in lightly salted boiling water 12 to 15 minutes or until tender; drain.<\/h3>\n<h3><strong>2.<\/strong>In a 12-inch skillet cook and stir garlic and thyme in butter over medium heat for 1 minute; add potatoes. Coarsely mash potatoes. Stir in buttermilk, 1\/2 tsp. salt, and 1\/4 tsp. black pepper. Fold in fontina cheese, half of the Parmesan, and the blue cheese. Evenly spread in baking dish.<\/h3>\n<h3><strong>3.<\/strong>In small bowl combine remaining Parmesan, panko, Italian seasoning, and oil; toss with a fork to combine. Evenly sprinkle over potato mixture in dish. Bake for 20 minutes or until bubbly and top is golden. Sprinkle with snipped fresh parsley.
