We Are Canning!"},"content":{"rendered":"<h3><em>Author: \u00a0Spring (Jordan)<\/em><\/h3>\n<h3>I never knew much about canning except my grandmothers did \u00a0lots of it. \u00a0My mother\/blog partner claims those skills skip a generation. \u00a0I remember seeing one of my grandmothers use her food mill as she was making tomato juice. \u00a0To this day, I still request the homemade apple butter my other grandmother makes and cans on a yearly basis. \u00a0I thought the whole thing was an interesting process.<\/h3>\n<h3>Fast forward now to a camping trip we took with some of our friends from NYC a few weeks ago. \u00a0They joined a CSA (Community Supported Agriculture),and since it was just the two of them, they usually had more produce then they knew what to do with. \u00a0So, they started canning. \u00a0During our camping trip they were telling us all they were canning, and it sounded amazing. \u00a0A few days later on our door step was a canning book and canning kit from our friends who sent it to us as a thank you for arranging the week-end. \u00a0It was now our turn to start. \u00a0 \u00a0The book has been great, and I would recommend if you are new to canning or would like some new recipes.<\/h3>\n<p style=\"text-align: center;\"><a href=\"http:\/\/the2seasons.com\/2011\/10\/04\/now-we-are-canning\/put-em-up-1\/\" rel=\"attachment wp-att-5154\"><img the city. \u00a0The overall market is huge, and the prices are great. \u00a0Here is some of the produce we purchased at the farmers market.<\/h3>\n<h3 style=\"text-align: center;\"><a pot that we own. \u00a0Since we didn&#8217;t have the canning rack that goes in the bottom, we used the rings of the jars. \u00a0This way the boiling water is able to get under the jars when we start to process them.<\/h3>\n<h3 style=\"text-align: center;\"><a href=\"http:\/\/the2seasons.com\/2011\/10\/04\/now-we-are-canning\/canning-better-dilly-beans\/\" rel=\"attachment wp-att-5087\"><img is the start of the dilly beans. \u00a0We added the beans and then put in the spices and vinegar before processing.<\/h3>\n<h3 style=\"text-align: center;\"><a salsa verde, pickles, applesauce, charred chili bbq sauce, and roasted red pepper ketchup.<\/h3>\n<h3 style=\"text-align: center;\">Mr. Spring is a home brewer, and he says canning is my version of
