They are perfect for this time of year. Cinnamon madeleines are especially good with a cup of hot tea in the afternoon when you need just a little something to hold you over until it’s time for dinner. Now, in order to make cinnamon madeleines or any kind of madeleine, you need a special pan. I use this pan that I purchased here.

Print

Yum

Cinnamon Madeleines

Ingredients

2 eggs\r

1 cup white sugar\r

1 cup all purpose flour\r

1/8 teaspoon ground nutmeg\r

3/4 cup butter, melted and cooled\r

1/2 teaspoon almond extract\r

1/2 teaspoon ground cinnamon \r

Glaze\r

1 teaspoon ground cinnamon\r

3/4 cup powdered sugar\r

2 tablespoons milk

Instructions

Preheat oven to 350 degrees F (180 degrees C).
