{"id":43005,"date":"2019-10-10T18:00:15","date_gmt":"2019-10-10T23:00:15","guid":{"rendered":"http:\/\/the2seasons.com\/?p=43005"},"modified":"2019-10-10T07:33:36","modified_gmt":"2019-10-10T12:33:36","slug":"butternut-squash-soup","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=43005","title":{"rendered":"Butternut Squash Soup"},"content":{"rendered":"<p>After being away from my kitchen for three weeks, I was just itching to do some cooking when we returned home from our vacation last weekend.\u00a0 I specifically wanted to make (and eat) some fall soup.\u00a0 Yes, chili would have been an easy go-to (and I plan to make some of it this afternoon), but I wanted a nutritious, colorful, and easy squash soup.\u00a0 I added the ingredients for butternut squash soup to my shopping cart and made some for lunch on our first day home.\u00a0 Friends, this butternut squash soup recipe is so very easy, and it just makes me feel healthier when I eat it.\u00a0 If you are looking for a soup that is a little bit different from the norm, then this is it.\u00a0 I served it with zucchini bread muffins that were in our freezer, but a good grilled cheese sandwich, tuna salad sandwich, or cornbread muffin would be the perfect partner for this soup. Oh, and this soup is dairy free, so it&#8217;s paleo friendly.<\/p>\n<p>I should add that I roasted my butternut squash in the oven for about 1 1\/2 hours at 350 degrees.\u00a0 However, a time saver would be to cook it in the microwave.
