{"id":42183,"date":"2019-07-25T18:00:48","date_gmt":"2019-07-25T23:00:48","guid":{"rendered":"http:\/\/the2seasons.com\/?p=42183"},"modified":"2019-07-25T13:31:24","modified_gmt":"2019-07-25T18:31:24","slug":"roasted-vegetable-soup","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=42183","title":{"rendered":"Roasted Vegetable Soup"},"content":{"rendered":"<p>We are participating in a CSA program this summer.\u00a0 CSA stands for Community Supported Agriculture.\u00a0 In the spring we sent a check to the Teal Tractor farm, and in June we started picking up a box of freshly picked produce at a nearby location each Monday.\u00a0 On Monday mornings we receive an email telling us what will be in our box that day, and they provide recipes that use the vegetables and fruits that we will be receiving.\u00a0 When our out-of-town family was here recently, I decided to make roasted vegetable soup one evening for dinner.\u00a0 I thought this soup would be a nice way to use up some of the veggies.\u00a0 It would also be a great way to expose the granddaughters (grandson was not here) to a new way of eating vegetables.\u00a0 They are good eaters who love healthy food, and they ate this right up.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-42375\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2019\/07\/Roasted-Vegetable-Soup-768x1024.png\" alt=\"\" width=\"640\" height=\"853\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2019\/07\/Roasted-Vegetable-Soup-768x1024.png 768w, http:\/\/the2seasons.com\/wp-content\/uploads\/2019\/07\/Roasted-Vegetable-Soup-242x323.png 242w, http:\/\/the2seasons.com\/wp-content\/uploads\/2019\/07\/Roasted-Vegetable-Soup-300x400.png 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>Since I was using up the vegetables that I had on hand, I did not actually follow a recipe.\u00a0 However, I read the Barefoot Contessa&#8217;s recipe before I proceeded so I could see the process.\u00a0 Her recipe is the one I am sharing with you here today.\u00a0 For our soup, I used potatoes, sweet potatoes, carrots, onions, garlic, tomatoes, kale, zucchini, and yellow squash.\u00a0 I did make croutons for the top of the soup, and the girls loved them.\u00a0 I also shredded some Parmesan cheese on the top which was a nice touch.\u00a0 So, the bottom line is that you can follow Ina&#8217;s directions, but use any veggies you want.\u00a0 This soup was even more flavorful the next day.<\/p>\n<h2>Roasted Vegetable Soup<\/h2>\n<p>\n    <div id=\"yrecipe-container-123\" class=\"yrecipe-container-border\" >\n    <div itemscope itemtype=\"http:\/\/schema.org\/Recipe\" id=\"yrecipe-container\" class=\"yrecipe\">\n      <div id=\"yrecipe-innerdiv\">\n        <div class=\"item b-b\"><div class=\"yrecipe-print-link fl-r\"><a class=\"butn-link\" title=\"Print this recipe\" href=\"javascript:void(0);\" onclick=\"yrPrint('yrecipe-container-123', 'http:\/\/the2seasons.com\/wp-content\/plugins\/yummly-rich-recipes\/', '' ); return false\">Print<\/a><\/div><div id=\"y-recipe-link-123\" class=\"y-recipe-link fl-r hide-print\"> <a href=\"\/\/yummly.com\" class=\"YUMMLY-YUM-BUTTON yummly-button add-recipe\">Yum<\/a>\n<script src=\"https:\/\/www.yummly.com\/js\/widget.js?wordpress&p=wp\"><\/script>\n                <\/div><div id=\"yrecipe-title\" itemprop=\"name\" class=\"b-b h-1 strong\" >Roasted Vegetable Soup<\/div>\n      <\/div><div class=\"ymeta yclear\">\n      <div class=\"fl-l width-50\"><\/div>\n      <div class=\"fl-l width-50\"><\/div>\n      <div class=\"yclear\">\n      <\/div>\n    <\/div><p id=\"yrecipe-ingredients\" class=\"h-4 strong\">Ingredients<\/p><ul id=\"yrecipe-ingredients-list\"><li id=\"yrecipe-ingredient-0\" class=\"ingredient\" itemprop=\"ingredients\">1 pound carrots, peeled\r<\/li><li id=\"yrecipe-ingredient-1\" class=\"ingredient\" itemprop=\"ingredients\">1 pound parsnips, peeled\r<\/li><li id=\"yrecipe-ingredient-2\" class=\"ingredient\" itemprop=\"ingredients\">1 large sweet potato, peeled\r<\/li><li id=\"yrecipe-ingredient-3\" class=\"ingredient\" itemprop=\"ingredients\">1 small butternut squash (about 2 pounds), peeled and seeded\r<\/li><li id=\"yrecipe-ingredient-4\" class=\"ingredient\" itemprop=\"ingredients\">3 tablespoons good olive oil\r<\/li><li id=\"yrecipe-ingredient-5\" class=\"ingredient\" itemprop=\"ingredients\">1 1\/2 teaspoons kosher salt\r<\/li><li id=\"yrecipe-ingredient-6\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 teaspoon freshly ground black pepper\r<\/li><li id=\"yrecipe-ingredient-7\" class=\"ingredient\" itemprop=\"ingredients\">2 tablespoons chopped fresh flat-leaf parsley<\/li><\/ul><p id=\"yrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p><ol id=\"yrecipe-instructions-list\" class=\"instructions\"><li id=\"yrecipe-instruction-0\" class=\"instruction\" itemprop=\"recipeInstructions\">Preheat the oven to 425 degrees.\r<\/li><li id=\"yrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Cut the veggies into pieces measuring about 1 - 1 1\/4 inches.\r<\/li><li id=\"yrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Spread the vegetables on one or two baking sheets.\r<\/li><li id=\"yrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Drizzle them with olive oil, salt,and pepper.  Mix well with your clean hands.\r<\/li><li id=\"yrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Bake 25 to 30 minutes or till done.\r<\/li><li id=\"yrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">When they are done, heat 3 cups chicken stock in a large stock pan.\r<\/li><li id=\"yrecipe-instruction-6\" class=\"instruction\" itemprop=\"recipeInstructions\">Coarsely puree the roasted vegetables and the chicken stock in the bowl of a food processor fitted with the steel blade (or use a handheld blender). Pour the soup back into the pot and season, to taste. Thin with more chicken stock and reheat. The soup should be thick but not like a vegetable puree, so add more chicken stock and\/or water until it's the consistency you like. .\r<\/li><li id=\"yrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">Top with croutons and Parmesan cheese.
