{"id":3996,"date":"2011-08-12T06:08:27","date_gmt":"2011-08-12T11:08:27","guid":{"rendered":"http:\/\/the2seasons.com\/?p=3996"},"modified":"2016-02-22T07:49:59","modified_gmt":"2016-02-22T12:49:59","slug":"cupcakes","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=3996","title":{"rendered":"Lemon Meringue Pie Cupcakes"},"content":{"rendered":"<p>&nbsp;<\/p>\n<h3>Happy Friday everyone! \u00a0Our neighbors told us last week that they are expecting their first child this winter, and we wanted to celebrate. \u00a0We had them over for dinner, and I decided I wanted to try my luck at baking something new. \u00a0I do not remember the last time I made cupcakes either from scratch or a box. \u00a0I was feeling daring and found a recipe from a book my aunt got me a couple years ago. \u00a0I decided to go for a Lemon Meringue Pie Cupcake, and I must say they were amazing. \u00a0I wanted to share the recipe for you to try. \u00a0The book where I got the recipe is &#8220;<a href=\"http:\/\/www.amazon.com\/gp\/product\/1840729961\/ref=as_li_qf_sp_asin_il_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1840729961&amp;linkCode=as2&amp;tag=the2sea-20&amp;linkId=VETH324DBCIR4CGY\">Cupcakes Galore<\/a>&#8221; by Gail Wagman.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/the2seasons.com\/2011\/08\/12\/cupcakes\/cupcakes\/\" rel=\"attachment wp-att-3997\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-3997\" title=\"Cupcakes\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2011\/08\/Cupcakes-1024x839.jpg\" alt=\"\" width=\"553\" height=\"453\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2011\/08\/Cupcakes-1024x839.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2011\/08\/Cupcakes-393x323.jpg 393w\" sizes=\"(max-width: 553px) 100vw, 553px\" \/><\/a><\/p>\n<h3 style=\"text-align: left;\"><strong>Lemon Meringue Pie Cupcakes<\/strong> (makes 12 cupcakes)<\/h3>\n<h3 style=\"text-align: left;\">Prepare the lemon cream<\/h3>\n<h3 style=\"text-align: left;\"><strong><em>Lemon Cream<\/em><\/strong><\/h3>\n<h3 style=\"text-align: left;\">3\/4 cup sugar<\/h3>\n<h3 style=\"text-align: left;\">3 tablespoons all purpose flour<\/h3>\n<h3 style=\"text-align: left;\">Pinch of salt<\/h3>\n<h3 style=\"text-align: left;\">1\/4 cup of lemon juice<\/h3>\n<h3 style=\"text-align: left;\">Grated rind of 1 lemon<\/h3>\n<h3 style=\"text-align: left;\">1\/2 cup water<\/h3>\n<h3 style=\"text-align: left;\">3 egg yolks, beaten (save the whites for meringue)<\/h3>\n<h3 style=\"text-align: left;\">2 tablespoons of unsalted butter<\/h3>\n<h3 style=\"text-align: left;\">In a double boiler, mix sugar, flour and salt together. \u00a0Add lemon juice and the rind. \u00a0Mix well. \u00a0Beat in the water, egg yolks and butter. \u00a0Place the mixture over hot simmering water in a double boiler and cook until smooth and thick, stirring constantly with a whisk (around 20 mins) Cool and set aside.<\/h3>\n<h3 style=\"text-align: left;\">Preheat oven to 350 F.<\/h3>\n<h3 style=\"text-align: left;\"><strong><em>Cupcake batter<\/em><\/strong><\/h3>\n<h3 style=\"text-align: left;\">1 1\/2 cups of all-pupose flour<\/h3>\n<h3 style=\"text-align: left;\">2 teaspoons baking powder<\/h3>\n<h3 style=\"text-align: left;\">1 teaspoon salt<\/h3>\n<h3 style=\"text-align: left;\">2 tablespoons grated lemon rind<\/h3>\n<h3 style=\"text-align: left;\">1\/2 cup of unsalted butter<\/h3>\n<h3 style=\"text-align: left;\">1 cup sugar<\/h3>\n<h3 style=\"text-align: left;\">2 eggs<\/h3>\n<h3 style=\"text-align: left;\">2 tablespoons lemon juice<\/h3>\n<h3 style=\"text-align: left;\">Mix flour, baking powder, salt and lemon rind together and set aside. \u00a0Cream butter and sugar together until light and fluffy. \u00a0Add eggs, one at a time, beating after each addition. \u00a0Add lemon juice and beat until well blended. \u00a0Add flour mixture and continue beating until batter is smooth.<\/h3>\n<h3 style=\"text-align: left;\">Fill 12 cupcake papers with batter. \u00a0Cook for 15 minutes or till cupcakes are golden on top. \u00a0Remove from oven and cool for 10 minutes.<\/h3>\n<h3 style=\"text-align: left;\"><em><strong>Meringue<\/strong><\/em><\/h3>\n<h3 style=\"text-align: left;\">3 egg whites<\/h3>\n<h3 style=\"text-align: left;\">Pinch of salt<\/h3>\n<h3 style=\"text-align: left;\">1\/4 cup of sugar<\/h3>\n<h3 style=\"text-align: left;\">A few teaspoons of sugar for dusting.<\/h3>\n<h3 style=\"text-align: left;\">To make the meringue beat egg whites with a pinch of salt until they start to stiffen.
