{"id":3875,"date":"2011-08-05T05:53:22","date_gmt":"2011-08-05T10:53:22","guid":{"rendered":"http:\/\/the2seasons.com\/?p=3875"},"modified":"2011-08-07T19:23:55","modified_gmt":"2011-08-08T00:23:55","slug":"garden-vegetable-pasta-salad","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=3875","title":{"rendered":"Garden Vegetable Pasta Salad"},"content":{"rendered":"<h3 style=\"text-align: left\"><em>Author: \u00a0Autumn<\/em><\/h3>\n<h3 style=\"text-align: left\">This year Mr. Autumn and I joined a CSA (Community Supported Agriculture) for the first time. \u00a0This is an organic farm, and people pay to become members. \u00a0Each week those members get a basket full of produce ranging from flowers, fruit, herbs and vegetables. \u00a0Our farm requires its members to come to the farm to get their food. \u00a0The growers feel it is important for people to see where their food is coming from and to experience it first-hand. \u00a0Some farms make deliveries to a general area in the city, and their members pick up their baskets that way.<\/h3>\n<h3 style=\"text-align: left\">I pick up our food basket on the farm every Thursday, and it is just like Christmas. \u00a0We never know what will be in our baskets from week to week. \u00a0Well, we have an idea, because we know when the squash are abundant or when the berries are ripe, but there are always a few surprises.<\/h3>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone\" src=\"http:\/\/nobsnutritionandfitness.files.wordpress.com\/2011\/07\/1072.jpg\" alt=\"\" width=\"288\" height=\"288\" \/><\/p>\n<h3 style=\"text-align: left\">Lately, we have had a lot of squash to eat, and I wanted to find a new way to use it. \u00a0The recipe I am sharing with you today was in the August\/September issue of <em>Taste of Home <\/em>magazine. \u00a0(It was contributed to the magazine by Tina Repak Mirilovich). It makes a huge bowl of salad. \u00a0I think grilled chicken or salmon could be added to make it the main course.<\/h3>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone\" src=\"http:\/\/www.goodveganfood.com\/wp-content\/uploads\/2010\/11\/grilled-vegetable-pasta-salad.jpg\" alt=\"\" width=\"400\" height=\"267\" \/><\/p>\n<h3 style=\"text-align: left\">GARDEN VEGETABLE PASTA SALAD<\/h3>\n<h3 style=\"text-align: left\">1 pound pasta (I used bow tie)<\/h3>\n<h3 style=\"text-align: left\">\u00a0&#8211; Cook according to package directions, drain, and let cool.<\/h3>\n<h3 style=\"text-align: left\">2 medium eggplants<\/h3>\n<h3 style=\"text-align: left\">2 medium zucchinis<\/h3>\n<h3 style=\"text-align: left\">2 medium yellow summer squash<\/h3>\n<h3 style=\"text-align: left\">1 large red onion, sliced<\/h3>\n<h3 style=\"text-align: left\">1 medium sweet red pepper (I used canned roasted peppers)<\/h3>\n<h3 style=\"text-align: left\">Olive oil<\/h3>\n<h3 style=\"text-align: left\">1\/2 teaspoon salt<\/h3>\n<h3 style=\"text-align: left\">1\/4 teaspoon pepper<\/h3>\n<h3 style=\"text-align: left\">\u00a0&#8211; Heat oven to 450 degrees. \u00a0Cube the vegetables and put them on a cookie sheet. \u00a0Toss with olive oil, salt, and pepper and roast for \u00a0 \u00a0 \u00a020 minutes, or till done. \u00a0Let cool.
