{"id":34273,"date":"2017-02-23T19:00:06","date_gmt":"2017-02-24T00:00:06","guid":{"rendered":"http:\/\/the2seasons.com\/?p=34273"},"modified":"2017-02-24T05:27:14","modified_gmt":"2017-02-24T10:27:14","slug":"roasted-tomato-and-shrimp-pasta","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=34273","title":{"rendered":"Roasted Tomato and Shrimp Pasta"},"content":{"rendered":"<p><em>I tested out Walmart&#8217;s Online Grocery service mentioned in this post and was compensated by Walmart in order to do so.\u00a0 All opinions are my own.<\/em><\/p>\n<h3><\/h3>\n<h3>Jordan has been on a clean eating plan for over a year, and she has really enjoyed having more energy and feeling better.\u00a0 She has used three cookbooks by Danielle Walker repeatedly.\u00a0 The meals she prepares from those books are always fresh, loaded with flavor, and guilt-free.\u00a0 Since she and Little Miss have been visiting us for the past week, I have been preparing meals from the cookbooks, too.\u00a0 We especially liked roasted tomato and shrimp pasta and thought you might enjoy it.\u00a0 The &#8220;pasta&#8221; portion of this meal is made from spaghetti squash, but you can easily substitute real pasta if you want. return false\">Print<\/a><\/div><div id=\"y-recipe-link-34\" class=\"y-recipe-link fl-r hide-print\"> <a href=\"\/\/yummly.com\" class=\"YUMMLY-YUM-BUTTON yummly-button add-recipe\">Yum<\/a>\n<script src=\"https:\/\/www.yummly.com\/js\/widget.js?wordpress&p=wp\"><\/script>\n                <\/div><div id=\"yrecipe-title\" itemprop=\"name\" class=\"b-b h-1 strong\" >Roasted Tomato and Shrimp Pasta<\/div>\n      <\/div><div class=\"ymeta yclear\">\n      <div class=\"fl-l width-50\"><\/div>\n      <div class=\"fl-l width-50\"><\/div>\n      <div class=\"yclear\">\n      <\/div>\n    <\/div><p id=\"yrecipe-ingredients\" class=\"h-4 strong\">Ingredients<\/p><ul id=\"yrecipe-ingredients-list\"><li id=\"yrecipe-ingredient-0\" class=\"ingredient\" itemprop=\"ingredients\">Serves 6\r<\/li><li id=\"yrecipe-ingredient-1\" class=\"ingredient\" itemprop=\"ingredients\">1 (3-pound) spaghetti squash\r<\/li><li id=\"yrecipe-ingredient-2\" class=\"ingredient\" itemprop=\"ingredients\">3 tablespoons plus 1 teaspoon extra virgin olive oil, divided\r<\/li><li id=\"yrecipe-ingredient-3\" class=\"ingredient\" itemprop=\"ingredients\">1 1\/2 teaspoon sea salt, divided\r<\/li><li id=\"yrecipe-ingredient-4\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 teaspoon black pepper\r<\/li><li id=\"yrecipe-ingredient-5\" class=\"ingredient\" itemprop=\"ingredients\">2 1\/2 pounds Roma tomatoes\r<\/li><li id=\"yrecipe-ingredient-6\" class=\"ingredient\" itemprop=\"ingredients\">4 cloves garlic\r<\/li><li id=\"yrecipe-ingredient-7\" class=\"ingredient\" itemprop=\"ingredients\">2 pounds medium shrimp (peeled, deveined, and tails removed)\r<\/li><li id=\"yrecipe-ingredient-8\" class=\"ingredient\" itemprop=\"ingredients\">1\/2 cup chopped fresh parsley\r<\/li><li id=\"yrecipe-ingredient-9\" class=\"ingredient\" itemprop=\"ingredients\">2 cups chopped chard, spinach, or baby kale\r<\/li><li id=\"yrecipe-ingredient-10\" class=\"ingredient\" itemprop=\"ingredients\">Juice of 1 lemon<\/li><\/ul><p id=\"yrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p><ol id=\"yrecipe-instructions-list\" class=\"instructions\"><li id=\"yrecipe-instruction-0\" class=\"instruction\" itemprop=\"recipeInstructions\">Preheat oven to 375 degrees.\r<\/li><li id=\"yrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Carefully cut the squash in half lengthwise.  Scoop out and discard the seeds.\r<\/li><li id=\"yrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Rub 1 teaspoon olive oil all over the skin of the squash and on the surface of the cut sides.  Sprinkle the cut sides with 1\/2 teaspoon of the salt and 1\/4 teaspoon of the pepper.\r<\/li><li id=\"yrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Place the tomatoes in a 9 x 12 inch baking dish and drizzle with the remaining 3 tablespoons of oil, garlic, remaining 1 teaspoon of salt, and remaining 1\/4 teaspoon of pepper.  Toss to combine.\r<\/li><li id=\"yrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Place the tomatoes and squash in the oven with the tomatoes on the higher rack.\r<\/li><li id=\"yrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Roast 30 to 35 minutes, stirring the tomatoes once halfway through.  The squash should be slightly soft to the touch.  \r<\/li><li id=\"yrecipe-instruction-6\" class=\"instruction\" itemprop=\"recipeInstructions\">Pull the squash out and set aside until cool enough to handle.\r<\/li><li id=\"yrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">Add the shrimp, parsley, greens, and lemon juice to the tomato dish and stir to combine.  Return the dish to the oven and continue roasting for 20 minutes, until the shrimp are pink and cooked through.\r<\/li><li id=\"yrecipe-instruction-8\" class=\"instruction\" itemprop=\"recipeInstructions\">Use a fork to loosen the strings of noodles from the squash and transfer them to plates or serving bowls.
