{"id":32022,"date":"2016-08-11T18:00:58","date_gmt":"2016-08-11T23:00:58","guid":{"rendered":"http:\/\/the2seasons.com\/?p=32022"},"modified":"2016-12-01T17:24:49","modified_gmt":"2016-12-01T22:24:49","slug":"pasta-with-tomato-pesto","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=32022","title":{"rendered":"Pasta with Tomato Pesto"},"content":{"rendered":"<h3>Are you a pesto lover like I am?\u00a0 To me pesto says summer.\u00a0 Fresh basil is growing in abundance which makes pesto a quick and easy dish that will really make a ho-hum meal become special.\u00a0 Thankfully, the basil in the herb garden this summer is growing by leaps and bounds.\u00a0 I can cut off a bunch to make pesto, and a few days later, the basil is ready to be cut again.\u00a0 I had never heard of tomato pesto until I came across a recipe for it in a monthly magazine we get from our realtor.\u00a0 It&#8217;s simply called <em>My Magazine<\/em>, and each month it features some really creative recipes.\u00a0 The magazine had tomato pesto served with fish, but I thought it would be just as good or even better served as the topping\/sauce for pasta.\u00a0 If you are growing tomatoes in your garden or if you purchase them at a farmer&#8217;s market, be sure to get some and make this deliciously, tasty summer treat.\u00a0 By the way, the recipe says it serves four, but I think doubling the recipe would be better for four people.<\/h3>\n<p><!--more--><\/p>\n<h3 style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-32037\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/Pasta-Tomato-Pesto-714x1024.jpg\" alt=\"Pasta with Tomato Pesto - The 2 Seasons\" width=\"640\" height=\"918\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/Pasta-Tomato-Pesto-714x1024.jpg 714w, http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/Pasta-Tomato-Pesto-225x323.jpg 225w, http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/Pasta-Tomato-Pesto-300x430.jpg 300w, http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/Pasta-Tomato-Pesto.jpg 2047w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/h3>\n<h3><\/h3>\n<h3>\u00a0<span style=\"text-decoration: underline;\"><em><strong>PASTA WITH TOMATO PESTO<\/strong><\/em><\/span><\/h3>\n<p>Serves 4<\/p>\n<h3>1 package of your favorite pasta<\/h3>\n<h3>1 pint cherry tomatoes, halved<\/h3>\n<h3>1\/4 cup olive oil<\/h3>\n<h3>1 cup fresh basil leaves<\/h3>\n<h3>2 tablespoons pine nuts (I use sunflower seeds)<\/h3>\n<h3>1 clove garlic, chopped<\/h3>\n<h3>Salt and pepper to taste<\/h3>\n<h3>Parmesan cheese for topping<\/h3>\n<h3 style=\"text-align: center;\">\u00a0<img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-32031\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/IMG_2992-1024x682.jpg\" alt=\"Pasta with Tomato Pesto - The 2 Seasons\" width=\"700\" height=\"466\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/IMG_2992-1024x682.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/IMG_2992-430x286.jpg 430w, http:\/\/the2seasons.com\/wp-content\/uploads\/2016\/08\/IMG_2992-300x200.jpg 300w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/h3>\n<h3><\/h3>\n<h3>Preheat oven to 250 degrees.\u00a0 Toss tomatoes lightly with olive oil and arranged on a rimmed baking sheet.\u00a0 Season with salt.\u00a0 Roast tomatoes for about 2 hours or until shriveled.\u00a0 Let cool.<\/h3>\n<p>&nbsp;<\/p>\n<h3><\/h3>\n<h3>Place tomatoes, basil, pine nuts, and garlic in a food processor and pulse to chop.\u00a0 Add olive oil and pulse to combine well.\u00a0 Season with salt and pepper.<\/h3>\n<p>&nbsp;<\/p>\n<h3><\/h3>\n<h3>Prepare pasta according to directions.\u00a0 Drain pasta.\u00a0 Add pesto and toss.\u00a0 Top with Parmesan cheese.\u00a0 Serve warm with a salad and garlic bread.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3>\u00a0 Don&#8217;t forget to come back tomorrow for The Seasons&#8217;
