{"id":3131,"date":"2011-07-01T05:37:37","date_gmt":"2011-07-01T10:37:37","guid":{"rendered":"http:\/\/the2seasons.com\/?p=3131"},"modified":"2011-07-01T06:03:30","modified_gmt":"2011-07-01T11:03:30","slug":"one-dessert-two-approaches","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=3131","title":{"rendered":"One Dessert &#8211; Two Approaches"},"content":{"rendered":"<h3><em>Authors: \u00a0Autumn and Spring<\/em><\/h3>\n<h3>Greetings from both of The 2 Seasons. \u00a0We have published over 100 posts, and yet, this is the first one we have written together.<\/h3>\n<h3>We are also thrilled that we were a featured blog at Wow Us Wednesdays at<span style=\"text-decoration: underline\"><a href=\"http:\/\/savvysouthernstyle.blogspot.com\/\"> Savvy Southern Style<\/a><\/span>. \u00a0Many bloggers participate in this gathering every week, and only a few are featured. \u00a0This week, however, we made the cut. \u00a0Yippee!!<\/h3>\n<h3>The recipe we are sharing is perfect for this upcoming week-end and \u00a0has been a long-time family favorite. It is a make-ahead dessert that you can put together in the morning before you start your holiday activities. \u00a0Then, after your cook-out, it will be ready and waiting in the frig. \u00a0For our busy readers, we have an easy recipe, and for those of you who like to cook from scratch, we offer that version, too. \u00a0So, here goes. \u00a0Jordan&#8217;s \u00a0(Spring&#8217;s) version will be first. \u00a0She is writing from Syracuse, NY, and I am in Lexington, KY.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone\" src=\"http:\/\/www.mybakingaddiction.com\/wp-content\/uploads\/images\/Eclair-Cake.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><\/p>\n<p>&nbsp;<\/p>\n<h3><strong><em>EASY ECLAIR CAKE<\/em><\/strong><\/h3>\n<h3>1 box \u00a0graham crackers<\/h3>\n<h3>2 \u00a03 1\/4 ounce boxes \u00a0instant French vanilla pudding<\/h3>\n<h3>3 1\/2 cups \u00a0milk<\/h3>\n<h3>1 8 ounce container \u00a0whipped topping<\/h3>\n<h3>1 can \u00a0chocolate frosting<\/h3>\n<h3>Butter or spray a 9 x 13 inch pan. \u00a0Line the bottom with whole graham crackers.<\/h3>\n<h3>In a mixing bowl, combine milk with the 2 packages of pudding. \u00a0When it is thick, fold in the container of whipped topping.<\/h3>\n<h3>Spread half of this mixture on the graham crackers.<\/h3>\n<h3>Top with another layer of crackers and then spread the remaining pudding mixture.<\/h3>\n<h3>Top with the last layer of crackers.<\/h3>\n<h3>Spread the frosting over the graham crackers. \u00a0Cover and refrigerate for at least two hours. \u00a0It will be ready to serve when the graham crackers have softened.<\/h3>\n<h3 style=\"text-align: center\"><a href=\"http:\/\/www.bakingjunkie.com\/wp-content\/uploads\/2011\/01\/IMG_7031.jpg\"><img decoding=\"async\" loading=\"lazy\" src=\"http:\/\/www.bakingjunkie.com\/wp-content\/uploads\/2011\/01\/IMG_7031.jpg\" alt=\"\" width=\"480\" height=\"320\" \/><\/a><\/h3>\n<h3><strong><em>ECLAIR CAKE FROM SCRATCH<\/em><\/strong><\/h3>\n<h3>1 box \u00a0graham crackers<\/h3>\n<h3>Butter or spray a 9 x 13 pan. \u00a0Line the bottom with graham crackers. \u00a0(You can make the graham crackers if you are <em>really<\/em> industrious).<\/h3>\n<h3>VANILLA PUDDING<\/h3>\n<h3>3\/4 cups sugar<\/h3>\n<h3>3 tablespoons \u00a0corn starch<\/h3>\n<h3>Gradually stir in 2 cups milk, mixing well. \u00a0Cook and stir over medium heat till it boils. \u00a0Cook 1 minute longer and remove from heat.<\/h3>\n<h3>Stir small amount of hot pudding into 3 slightly beaten egg yolks. \u00a0Immediately return to hot mixture and cook 2 minutes longer, constantly stirring.<\/h3>\n<h3>Remove from heat and add 2 tablespoons butter and 1 teaspoon vanilla.<\/h3>\n<h3>Let cool.<\/h3>\n<h3>Meanwhile, whip 1 pint whipping cream, with 1 \/3 cup sugar added, till stiff. \u00a0Fold into cooled pudding.<\/h3>\n<h3>Spread half of this mixture onto the graham crackers. \u00a0Top with another layer of crackers and repeat. \u00a0Top with the final layer of graham crackers.<\/h3>\n<h3>FROSTING<\/h3>\n<h3>2 3\/4 cups powdered sugar<\/h3>\n<h3>6 tablespoons unsweetened cocoa powder<\/h3>\n<h3>6 tablespoons butter, softened<\/h3>\n<h3>5 tablespoons milk<\/h3>\n<h3>1 teaspoon vanilla<\/h3>\n<h3>Combine and mix with an electric mixer till fluffy.<\/h3>\n<h3>Spread on top of the final layer of graham crackers. \u00a0Cover with foil and refrigerate at least 2 hours or till crackers are softened.<\/h3>\n<h3>Enjoy!<\/h3>\n<h3>Cheers! and Take care!<\/h3>\n<p><em>Images from www.mybakingaddiction.com and www.bakingjunkie.com<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Authors: \u00a0Autumn and Spring Greetings from both of The 2 Seasons. \u00a0We have published over 100 posts, and yet, this is the first one we have written together.
