<em>Southern Living<\/em> magazine<\/p>\n<p>&nbsp;<\/p>\n<h3>1 cup butter, softened<\/h3>\n<h3><\/h3>\n<h3>1\/2 cup sugar<\/h3>\n<h3><\/h3>\n<h3>1\/4 teaspoon vanilla extract<\/h3>\n<h3><\/h3>\n<h3>2 1\/4 cups all purpose flour<\/h3>\n<h3><\/h3>\n<h3>2 tablespoons minced crystallized ginger<\/h3>\n<h3><\/h3>\n<h3>1\/8 teaspoon table salt<\/h3>\n<h3><\/h3>\n<h3>Lemon Cream Cheese Frosting (follows)<\/h3>\n<p>&nbsp;<\/p>\n<h3><\/h3>\n<h3>&#8211; Preheat oven to 275 degrees.\u00a0 Beat butter at medium speed with a heavy duty electric stand mixer till creamy; gradually add sugar, beating well.\u00a0 Stir in vanilla.<\/h3>\n<h3><\/h3>\n<h3>&#8211; Stir together flour, ginger, and slat; gradually add to butter mixture, beating at low speed until blended after each addition.<\/h3>\n<h3><\/h3>\n<h3>&#8211;\u00a0 Place dough on a lightly floured surface and roll dough to 1\/4 inch thick.\u00a0 Cut with a 2-inch round cutter.\u00a0 Place 2 inches apart on 2 parchment lined baking sheets (12 per sheet).\u00a0 Reroll scraps once.<\/h3>\n<h3><\/h3>\n<h3>&#8211;
