{"id":25341,"date":"2014-12-04T19:00:29","date_gmt":"2014-12-05T00:00:29","guid":{"rendered":"http:\/\/the2seasons.com\/?p=25341"},"modified":"2014-12-04T12:05:08","modified_gmt":"2014-12-04T17:05:08","slug":"spoon-bread-recipe","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=25341","title":{"rendered":"Spoon Bread Recipe"},"content":{"rendered":"<h3>With a cold rain falling outside, I decided it was the perfect time for some true comfort food.\u00a0 Immediately I thought of Kentucky spoon bread, a popular southern side dish that is between corn bread and a souffle.\u00a0 I looked up the recipe on line and found several variations &#8211; some simple and some not so much.\u00a0 For those of you who are unfamiliar with spoon bread, it is perfect served as a side with a big bowl of soup, great as a vessel for gravy or sauces, or can become a sweet with a drizzle of honey and butter.\u00a0 It is spooned out of the pan onto a plate, and you eat it with a fork or spoon and not your fingers.<\/h3>\n<p><!--more--><\/p>\n<p style=\"text-align: center\">\u00a0<img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-25345\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/12\/Spoon-Bread-681x1024.jpg\" alt=\"Spoon Bread\" width=\"466\" height=\"700\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/12\/Spoon-Bread-681x1024.jpg 681w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/12\/Spoon-Bread-215x323.jpg 215w\" sizes=\"(max-width: 466px) 100vw, 466px\" \/><\/p>\n<h3><\/h3>\n<h3><span style=\"text-decoration: underline\"><em><strong>SPOON BREAD<\/strong><\/em><\/span><\/h3>\n<p>&nbsp;<\/p>\n<h3>Source &#8211; <a href=\"http:\/\/www.tasteofhome.com\/\">Taste of Home<\/a><\/h3>\n<p>&nbsp;<\/p>\n<h3>4 cups milk<\/h3>\n<h3>1 cup corn meal<\/h3>\n<h3>3 teaspoons sugar<\/h3>\n<h3>1 teaspoon salt<\/h3>\n<h3>1\/2 teaspoon baking powder<\/h3>\n<h3>2 tablespoons butter<\/h3>\n<h3>3 eggs, separated<\/h3>\n<p>&nbsp;<\/p>\n<h3><\/h3>\n<h3>1.\u00a0 <span class=\"rd_name\">In a large saucepan, heat 3 cups milk over medium heat until bubbles form around sides of pan. <\/span><\/h3>\n<p>&nbsp;<\/p>\n<h3>2.\u00a0 <span class=\"rd_name\">Meanwhile, in a small bowl, combine the cornmeal, sugar, salt and remaining milk until smooth. Slowly whisk cornmeal mixture into hot milk. Cook and stir until mixture comes to a boil. Reduce heat; simmer for 5 minutes, stirring constantly. <\/span><\/h3>\n<p>&nbsp;<\/p>\n<div><\/div>\n<div><\/div>\n<h3>3.\u00a0 <span class=\"rd_name\">Remove from the heat. Sprinkle baking powder over the cornmeal mixture, then stir it in with the butter. In a small bowl, beat egg yolks; stir in a small amount of hot cornmeal mixture. Return all to the pan and mix well. <\/span><\/h3>\n<p>&nbsp;<\/p>\n<h3><\/h3>\n<h3><\/h3>\n<h3>4.\u00a0 <span class=\"rd_name\">In a small bowl, beat egg whites until stiff peaks form. Fold a fourth of the egg whites into the cornmeal mixture. Fold in remaining egg whites until blended. <\/span><\/h3>\n<p>&nbsp;<\/p>\n<div><\/div>\n<h3>5.\u00a0 <span class=\"rd_name\">Transfer to a greased 2-1\/2-qt. baking dish. Bake, uncovered, at 350\u00b0 for 40-45 minutes or until puffed and golden brown.
