{"id":24491,"date":"2014-09-18T18:00:03","date_gmt":"2014-09-18T23:00:03","guid":{"rendered":"http:\/\/the2seasons.com\/?p=24491"},"modified":"2014-09-18T08:36:33","modified_gmt":"2014-09-18T13:36:33","slug":"chicken-pot-pie-pumpkin","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=24491","title":{"rendered":"Chicken Pot Pie Baked in a Pumpkin"},"content":{"rendered":"<h3>People always say that we eat with our eyes first.\u00a0 As soon as they see it, this chicken pot pie baked in a pumpkin will make your family&#8217;s mouth water.\u00a0 When they bite into it, they&#8217;ll be even more impressed.\u00a0 This pot pie is fancy enough for dinner guests, and simple enough for just a meal for two.\u00a0 The showstopper is using some pie crust as the lid.\u00a0 It&#8217;s so darn cute &#8211; and delicious, too.<\/h3>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<h3 style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-24507\" alt=\"Pumpkin pot pie\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/09\/Pumpkin-pot-pie-681x1024.jpg\" width=\"409\" height=\"614\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/09\/Pumpkin-pot-pie-681x1024.jpg 681w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/09\/Pumpkin-pot-pie-215x323.jpg 215w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/09\/Pumpkin-pot-pie.jpg 1975w\" sizes=\"(max-width: 409px) 100vw, 409px\" \/><\/h3>\n<h3><\/h3>\n<h3 style=\"text-align: center\">Even though it might look difficult, making this beauty is really very easy.\u00a0 All you need to do is buy the little pie pumpkins at the grocery or farmers&#8217; market.\u00a0 They become the vessels to hold the pot pie, but you can eat them, too.\u00a0 Cut off the tops and clean out the seeds and strings from the inside.\u00a0 Make your favorite chicken pot pie recipe.\u00a0 I used <a title=\"Bisquick Chicken Pot Pie\" href=\"http:\/\/the2seasons.com\/2014\/01\/09\/bisquick-chicken-pot-pie\/\">this one<\/a> minus the Bisquick portion. Put your chicken\/veggie mixture into the hollowed out pumpkins.\u00a0 Use a store-bought pie crust and cut little circles to put on the top of the pumpkins. Then bake them in a 350 degree oven for 45 &#8211; 60 minutes.\u00a0 I partially cooked the veggies before adding them to the chicken mixture to make sure they would be thoroughly cooked.<\/h3>\n<p style=\"text-align: center\">\u00a0<img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-24522\" alt=\"Chicken pot pie pumpkin\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/09\/IMG_0959-1024x767.jpg\" width=\"614\" height=\"460\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/09\/IMG_0959-1024x767.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/09\/IMG_0959-430x323.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center\">I baked them on a sheet of foil in a cake pan.\u00a0 The foil made for easy clean-up in case they dripped.\u00a0 Also, if your pumpkins don&#8217;t want to sit straight, you can put toothpicks in their sides to act as supports.\u00a0 I can&#8217;t tell you how much we enjoyed eating them, and I think it would be a great way to get the kids to eat their veggies.
