{"id":24215,"date":"2014-08-28T18:00:53","date_gmt":"2014-08-28T23:00:53","guid":{"rendered":"http:\/\/the2seasons.com\/?p=24215"},"modified":"2015-03-03T19:27:20","modified_gmt":"2015-03-04T00:27:20","slug":"sweet-potato-frittata-paleo-friendly","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=24215","title":{"rendered":"Sweet Potato Frittata (Paleo Friendly)"},"content":{"rendered":"<h3><\/h3>\n<h3>I love concocting a good frittata and wanted to make one for brunch last week-end.\u00a0 The problem was that the frittatas I have eaten have all been made with regular hash browns as their base.\u00a0 Since Mr. Right and I eat sweet potatoes instead, I decided to make up my own recipe, and it turned out perfectly.\u00a0 It was so good, Mr. Right had three servings, but who&#8217;s counting???\u00a0 And by the way, my favorite room is being featured today at <a href=\"http:\/\/www.savvysouthernstyle.net\/\">Savvy Southern Style<\/a>.\u00a0 Be sure to stop in and see which room it is.<\/h3>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-24216\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/08\/Sweet-Potato-Frittata-681x1024.jpg\" alt=\"Sweet Potato Frittata\" width=\"409\" height=\"614\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/08\/Sweet-Potato-Frittata-681x1024.jpg 681w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/08\/Sweet-Potato-Frittata-215x323.jpg 215w\" sizes=\"(max-width: 409px) 100vw, 409px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h3><strong><span style=\"text-decoration: underline;\">DIRECTIONS<\/span><\/strong><\/h3>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h3>8 ounces of ham, cut into small pieces<\/h3>\n<\/li>\n<li>\n<h3>1 tablespoon olive oil<\/h3>\n<\/li>\n<li>\n<h3>2 sweet potatoes, peeled and diced<\/h3>\n<\/li>\n<li>\n<h3>1 cup chopped broccoli<\/h3>\n<\/li>\n<li>\n<h3>1\/2 cup chopped red onion<\/h3>\n<\/li>\n<li>\n<h3>2 teaspoons fresh parsley (chopped), optional<\/h3>\n<\/li>\n<li>\n<h3>6 eggs<\/h3>\n<\/li>\n<li>\n<h3>3 tablespoons water<\/h3>\n<\/li>\n<li>\n<h3>1\/2 teaspoon salt<\/h3>\n<\/li>\n<li>\n<h3>1\/4 teaspoon pepper<\/h3>\n<\/li>\n<li>\n<h3>1\/4 teaspoon paprika<\/h3>\n<\/li>\n<li>\n<h3>1\/2 cup shredded cheese (omit if you are making the Paleo version)<\/h3>\n<\/li>\n<\/ul>\n<h3><\/h3>\n<h3>Preheat oven to 350 degrees.\u00a0 Heat the olive oil into a large iron skillet, and add the sweet potatoes, ham, onions and broccoli.\u00a0 Cook on medium heat.\u00a0 While they are cooking, beat together the eggs, water, salt, pepper, parsley, and paprika.\u00a0 When the potato mixture is done, pour the eggs on top.\u00a0 Sprinkle the cheese over the entire mixture, and bake in the oven for 12 &#8211;
