{"id":22012,"date":"2014-03-13T18:03:28","date_gmt":"2014-03-13T23:03:28","guid":{"rendered":"http:\/\/the2seasons.com\/?p=22012"},"modified":"2014-03-13T18:03:28","modified_gmt":"2014-03-13T23:03:28","slug":"french-mocha-macarons","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=22012","title":{"rendered":"French Mocha Macarons"},"content":{"rendered":"<h3>Thanks to Martha Stewart, I checked something off of my bucket list today.\u00a0 My March issue of Martha Stewart <em>Living<\/em> arrived, and the front cover was peppered with beautiful, pastel macarons.\u00a0 Now, check that spelling.\u00a0 It&#8217;s not the traditional coconut macaroons like the ones in <a title=\"Coconut Macaroons\" href=\"http:\/\/the2seasons.com\/2011\/12\/15\/coconut-macaroons\/\">this recipe<\/a> that Jordan made.\u00a0 These are the delicate, little French sweets that are all the rage.\u00a0 I have been wanting to make them forever, and she took the fear factor out of it.<\/h3>\n<h3><!--more--><\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-22013\" alt=\"Macarons\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/Macarons-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/Macarons-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/Macarons-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/p>\n<h3 style=\"text-align: center\"><\/h3>\n<h3 style=\"text-align: center\">I studied the recipe and realized I had every ingredient on hand except food coloring.\u00a0 I dashed over to our neighborhood Kroger, which is closing its doors this Saturday, and low and behold they were out!!!\u00a0 Yikes!!!\u00a0 I wanted to make a pastel green mint macaron in honor of St. Patrick&#8217;s Day, but had to switch to Plan B.\u00a0 Therefore, I opted to make the mocha macaron which highlights the flavors of chocolate and coffee.\u00a0 (It didn&#8217;t require food coloring).\u00a0 I&#8217;ll be sure to pick up some food coloring on my next trip to the grocery because making these cookies was a lot of fun instead of being intimidating like I always thought.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-22014\" alt=\"Macarons\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7341-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7341-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7341-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/p>\n<h3 style=\"text-align: center\"><\/h3>\n<h3 style=\"text-align: center\">Before I started the recipe, I read the reviews that were on Martha&#8217;s website.\u00a0 A few people mentioned that you need to be very precise when following the directions so I pulled out my food scale.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-22015\" alt=\"Macarons\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7323-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7323-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7323-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/p>\n<h3 style=\"text-align: center\"><\/h3>\n<h3 style=\"text-align: center\">Since the measurements were in both grams and cups, I\u00a0 decided to go with the grams since they are more precise.\u00a0 Don&#8217;t worry, though.\u00a0 You can use your measuring cups and still be okay.<\/h3>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center\"><\/h3>\n<h3 style=\"text-align: left\"><span style=\"text-decoration: underline\"><strong>MOCHA MACARONS<\/strong><\/span><\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: left\"><em>Source &#8211; Martha Stewart<\/em><\/p>\n<h3 style=\"text-align: left\">2\/3 cups almond flour (or sliced blanched almonds which need to be ground in the food processor)<\/h3>\n<h3 style=\"text-align: left\">2 cup confectioners sugar<\/h3>\n<h3>1\/2 teaspoon instant coffee grains<\/h3>\n<h3 style=\"text-align: left\">2 large egg white, room temperature<\/h3>\n<h3 style=\"text-align: left\">1\/4 cup granulated sugar<\/h3>\n<p>&nbsp;<\/p>\n<h3>Pulse confectioners&#8217; sugar and almond flour in a food processor until combined and then sift the mixture 2 times.<\/h3>\n<p>&nbsp;<\/p>\n<h3><\/h3>\n<h3>Preheat oven to 350 degrees. Whisk whites with a mixer on medium speed until foamy.\u00a0 Reduce speed to low, then add granulated sugar. Increase speed to high, and whisk until stiff peaks form, about 8 minutes. Sift flour mixture over whites, and fold in until mixture is smooth and shiny.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-22018\" alt=\"Macarons\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7331-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7331-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7331-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: left\">Transfer batter to a pastry bag fitted with a 1\/2-inch plain round tip, and pipe 3\/4-inch rounds 1 inch apart on parchment-lined baking sheets, dragging pastry tip to the side of rounds rather than forming peaks. Tap bottom of each sheet on work surface to release trapped air. Let stand at room temperature for 15 minutes.\u00a0 Bake 1 sheet at a time, rotating halfway through, until macarons are crisp and firm, about 10 minutes.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-22019\" alt=\"Macarons\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7334-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7334-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7334-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/p>\n<h3><\/h3>\n<h3 style=\"text-align: left\">Let macarons cool on cookie sheets for 2 to 3 minutes, then transfer to a wire rack. (If macarons stick, spray water underneath parchment. The steam will help release macarons.)<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-22020\" alt=\"Macarons\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7338-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7338-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2014\/03\/IMG_7338-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/h3>\n<h3 style=\"text-align: left\">Pipe 1 teaspoon filling onto the flat side of a cookie and sandwich 2 same-size macarons together. Serve immediately, or stack between layers of parchment, wrap in plastic, and freeze for up to 3 months.<\/h3>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: left\"><strong><span style=\"text-decoration: underline\">FILLING<\/span><\/strong><\/h3>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: left\"><strong><\/strong>1\/2 cup heavy cream<\/h3>\n<h3 style=\"text-align: left\">3 1\/2 ounces dark chocolate chips<\/h3>\n<h3 style=\"text-align: left\">1 tablespoon unsalted butter, softened<\/h3>\n<h3 style=\"text-align: left\">Bring cream to a boil in a saucepan over medium-high heat. Pour cream over chocolate in a heatproof bowl. Let stand for 2 minutes. Add butter, then whisk mixture until smooth. Let cool, stirring often.
