{"id":20640,"date":"2013-10-31T18:05:33","date_gmt":"2013-10-31T23:05:33","guid":{"rendered":"http:\/\/the2seasons.com\/?p=20640"},"modified":"2015-10-03T12:43:43","modified_gmt":"2015-10-03T17:43:43","slug":"inas-pear-clafouti-recipe","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=20640","title":{"rendered":"Pear Clafouti Recipe"},"content":{"rendered":"<h3 style=\"text-align: left\">Last week-end I had some pears that needed to be used, and I knew just the recipe for them.\u00a0 The Barefoot Contessa has a delicious recipe called pear clafouti.\u00a0 It&#8217;s a very easy fruit and custard combo that resembles a pie without the crust.\u00a0 I have made this recipe many times, and it would work with apples or peaches, I think.\u00a0 In the world of desserts, it&#8217;s not so bad for you.\u00a0 I used skim milk, and there&#8217;s not much sugar in it.<\/h3>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-29062\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/10\/Pear-Clafouti-682x1024.jpg\" alt=\"Pear Clafouti\" width=\"640\" height=\"961\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/10\/Pear-Clafouti-682x1024.jpg 682w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/10\/Pear-Clafouti-215x323.jpg 215w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/10\/Pear-Clafouti-300x451.jpg 300w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/10\/Pear-Clafouti-900x1352.jpg 900w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/h3>\n<h3 style=\"text-align: center\"><\/h3>\n<h3 style=\"text-align: left\"><em><span style=\"text-decoration: underline\"><strong>BAREFOOT CONTESSA&#8217;S PEAR CLAFOUTI<\/strong><\/span><\/em><\/h3>\n<h3 style=\"text-align: left\"><\/h3>\n<div>\n<h3>1 tablespoon unsalted butter, at room temperature<\/h3>\n<h3>1\/3 cup plus 1 tablespoon granulated sugar<\/h3>\n<h3>3 extra-large eggs, at room temperature<\/h3>\n<h3>6 tablespoons all-purpose flour<\/h3>\n<h3>1 1\/2 cups heavy cream (I used skim milk)<\/h3>\n<h3>2 teaspoons pure vanilla extract<\/h3>\n<h3>1 teaspoon grated lemon zest (2 lemons)<\/h3>\n<h3>1\/4 teaspoon kosher salt<\/h3>\n<h3>2 tablespoons pear brandy (I used bourbon)<\/h3>\n<h3>2 to 3 firm but ripe Bartlett pears<\/h3>\n<h3>Confectioners&#8217; sugar<\/h3>\n<h3><\/h3>\n<p>&nbsp;<\/p>\n<h3><span style=\"text-decoration: underline\">Directions<\/span><\/h3>\n<p>&nbsp;<\/p>\n<h3>Preheat the oven to 375 degrees F.<\/h3>\n<h3>Butter a 10 by 3 by 1 1\u20442-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.<\/h3>\n<p>&nbsp;<\/p>\n<h3>Beat the eggs and the 1\u20443 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.<\/h3>\n<p>&nbsp;<\/p>\n<h3>Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish.
