Once you taste them, you won&#8217;t mind. \u00a0Before I show you the recipe, I have to share a picture Mr. Spring took of me before I would let him eat the pancakes. \u00a0He is a good sport letting me use the dining room to set up a photo shoot.<\/h3>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-20119\" alt=\"Lemon Ricotta Pancakes\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/09\/Pancake-pic-me.jpg\" width=\"433\" height=\"768\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/09\/Pancake-pic-me.jpg 541w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/09\/Pancake-pic-me-182x323.jpg 182w\" sizes=\"(max-width: 433px) 100vw, 433px\" \/><\/p>\n<h3 style=\"text-align: center;\"><\/h3>\n<h3 style=\"text-align: center;\">This is me practicing photography with the natural light from the dining room.<\/h3>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: left;\"><span style=\"text-decoration: underline;\"><strong>LEMON RICOTTA PANCAKES<\/strong><\/span><\/h3>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: left;\">2\/3 cup all-purpose flour<\/h3>\n<h3 style=\"text-align: left;\">1\/2 teaspoon baking soda<\/h3>\n<h3 style=\"text-align: left;\">1\/2 teaspoon salt<\/h3>\n<h3 style=\"text-align: left;\">1 cup (8oz) whole-milk ricotta cheese<\/h3>\n<h3 style=\"text-align: left;\">2 large eggs, separated, plus 2 large whites<\/h3>\n<h3 style=\"text-align: left;\">1\/3 cup whole milk<\/h3>\n<h3 style=\"text-align: left;\">1 teaspoon grated lemon zest plus 4 teaspoons juice<\/h3>\n<h3 style=\"text-align: left;\">1\/2 teaspoon vanilla extract<\/h3>\n<h3 style=\"text-align: left;\">2 tablespoons unsalted butter, melted<\/h3>\n<h3 style=\"text-align: left;\">1\/4 cup sugar<\/h3>\n<h3 style=\"text-align: left;\">1-2 teaspoons vegetable oil.<\/h3>\n<h3 style=\"text-align: left;\">1. (This step I did not do, but if you are making them for a group, I would recommend it.) \u00a0Adjust oven rack to middle position and heat oven to 200 degrees. \u00a0Spray wire rack set in rimmed baking sheet with vegetable oil spray and place in oven.<\/h3>\n<h3 style=\"text-align: left;\">2. Whisk flour, baking soda, and salt together in medium bowl and make a well in the center. \u00a0Add ricotta, egg yolks, milk, lemon zest and juice, add vanilla and whisky until just combined. \u00a0Gently stir in melted butter.<\/h3>\n<h3 style=\"text-align: left;\">3.
