{"id":19766,"date":"2013-08-29T18:07:53","date_gmt":"2013-08-29T23:07:53","guid":{"rendered":"http:\/\/the2seasons.com\/?p=19766"},"modified":"2013-08-29T18:07:53","modified_gmt":"2013-08-29T23:07:53","slug":"red-potato-dill-salad","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=19766","title":{"rendered":"Red Potato &#038; Dill Salad"},"content":{"rendered":"<h3>I know most of you are craving fall, but I am holding on to summer as long as I can. \u00a0This week-end I am going to hop on a kayak loaded with camping gear and head out to the Adirondacks with Mr. Spring, Gracie, and one of my roommates from the days I lived in San Francisco. \u00a0I can&#8217;t wait to soak in more of summer. \u00a0Today, I am going to share with you a great potato salad recipe that will be great for the long weekend.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-19767\" alt=\"Red Potato &amp; Dill Salad\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/Salad-with-mark.jpg\" width=\"640\" height=\"427\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/Salad-with-mark.jpg 800w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/Salad-with-mark-430x287.jpg 430w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<p><!--more--><\/p>\n<h3 style=\"text-align: center;\">We recently picked up a recipe magazine from our local grocery store Wegmans. \u00a0We have enjoyed the recipes we have tried, and this is one we wanted to share from the magazine. \u00a0Plus, it is healthy for potato salad.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-19768\" alt=\"Red Potato Salad\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/IMG_5351.jpg\" width=\"640\" height=\"427\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/IMG_5351.jpg 800w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/IMG_5351-430x287.jpg 430w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<h3 style=\"text-align: center;\"><\/h3>\n<h3 style=\"text-align: center;\">This year we were very successful with our potato crop in our square foot garden. \u00a0This is only half of the potatoes, and to think we got so many potatoes with only four square feet! \u00a0I feel like a farmer, sort of.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-19767\" alt=\"Red Potato &amp; Dill Salad\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/Salad-with-mark.jpg\" width=\"640\" height=\"427\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/Salad-with-mark.jpg 800w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/08\/Salad-with-mark-430x287.jpg 430w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<h3><\/h3>\n<h3><\/h3>\n<h3><span style=\"text-decoration: underline;\"><em>RED POTATO AND DILL SALAD<\/em><\/span><\/h3>\n<p>&nbsp;<\/p>\n<h3>(Makes 9 cups, 80 calories per 4 oz, serving)<\/h3>\n<h3>-2.5 lbs red potatoes skin on , 3\/4 inch diced<\/h3>\n<h3>-1\/4 cup fresh dill, chopped<\/h3>\n<h3>-1 bunch green onions, thinly sliced<\/h3>\n<h3>-1 cup plain Greek yogurt<\/h3>\n<h3>-3.5 tbps Dijon whole grain mustard<\/h3>\n<h3>&#8211; 2 tsp hot pepper spread (This is Wegman specific, but you can also use a tad of cajun spices or rub)<\/h3>\n<h3>-Salt and pepper to taste<\/h3>\n<p>&nbsp;<\/p>\n<h3>Add potatoes and enough cold water to cover in stockpot. \u00a0Simmer on medium for about 20 mins (do not boil), until potatoes are fork-tender.
