{"id":18937,"date":"2013-07-18T18:25:42","date_gmt":"2013-07-18T23:25:42","guid":{"rendered":"http:\/\/the2seasons.com\/?p=18937"},"modified":"2013-07-18T18:25:42","modified_gmt":"2013-07-18T23:25:42","slug":"zucchini-muffins","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=18937","title":{"rendered":"Zucchini Muffins"},"content":{"rendered":"<h3>Zucchini is one of my favorite vegetables, and it can be used so many ways.\u00a0 I love baking zucchini bread, but recently I decided to make some zucchini muffins for a special breakfast.\u00a0 Muffins are so handy to have around.\u00a0 They can be easily frozen and then popped into the microwave for a quick breakfast, a fancy breakfast, or a snack.\u00a0 The recipe I have used throughout our marriage is really heavy on the oil, so I looked on-line and found this great recipe on the <a href=\"http:\/\/www.tasteofhome.com\/recipes\/zucchini-muffins\">Taste of Home website<\/a>.\u00a0 It will definitely be used again.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-18939\" alt=\"Zucchine muffin\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/07\/IMG_6122-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/07\/IMG_6122-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/07\/IMG_6122-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/h3>\n<h3 style=\"text-align: center\"><\/h3>\n<h3 style=\"text-align: center\">This muffin recipe tastes great, and you won&#8217;t have the guilt of consuming too much oil.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3><span style=\"text-decoration: underline\">ZUCCHINI MUFFINS<\/span><\/h3>\n<h3><\/h3>\n<ul>\n<li>\n<h3>3\/4 cup <i>all-purpose flour<\/i><\/h3>\n<\/li>\n<li>\n<h3>1\/2 cup <i>sugar<\/i><\/h3>\n<\/li>\n<li>\n<h3>1\/4 teaspoon <i>baking powder<\/i><\/h3>\n<\/li>\n<li>\n<h3>1\/4 teaspoon <i>baking soda<\/i><\/h3>\n<\/li>\n<li>\n<h3>1\/4 teaspoon <i>salt<\/i><\/h3>\n<\/li>\n<li>\n<h3>1\/4 teaspoon <i>ground cinnamon<\/i><\/h3>\n<\/li>\n<li>\n<h3><i>1 egg<\/i><\/h3>\n<\/li>\n<li>\n<h3>1\/4 cup <i>canola oil<\/i><\/h3>\n<\/li>\n<li>\n<h3>1 cup <i>finely shredded unpeeled zucchini<\/i><\/h3>\n<\/li>\n<li>\n<h3>1\/2 cup <i>chopped walnuts<\/i><\/h3>\n<\/li>\n<li>\n<h3><i>1\/4 cup dried currants <i>or<\/i> chopped raisins<\/i><\/h3>\n<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<ul>\n<li>\n<h3>In a bowl, combine the first six ingredients. Combine the egg and oil; stir into dry ingredients just until moistened. Fold in the zucchini, walnuts and currants.<\/h3>\n<\/li>\n<li>\n<h3>Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Bake at 350\u00b0 for 22-25 minutes or until a toothpick comes out clean.
