market, and all of the other ingredients were in my <a title=\"Our New Kitchen Pantry Reveal\" href=\"http:\/\/the2seasons.com\/2011\/06\/12\/our-new-pantry-reveal\/\">pantry<\/a>. \u00a0So, while some turkey burgers were cooking away on the grill, I assembled these little summer treats in just a few minutes. \u00a0Frying just doesn&#8217;t happen much chez moi, but pulling out the iron skillet and cleaning up the splatters afterwards were worth it.<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-18829\" alt=\"IMG_6117\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/07\/IMG_6117-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/07\/IMG_6117-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/07\/IMG_6117-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/p>\n<p><!--more--><\/p>\n<h3 style=\"text-align: center\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-18828\" alt=\"Zucchine fritters\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/06\/IMG_6118-1024x574.jpg\" width=\"614\" height=\"344\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/06\/IMG_6118-1024x574.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/06\/IMG_6118-430x241.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3><strong><span style=\"text-decoration: underline\">ZUCCHINI<\/span> FRITTERS<\/strong><\/h3>\n<p>&nbsp;<\/p>\n<h3>SOY DIPPING SAUCE<\/h3>\n<h3>3 tablespoons unseasoned rice vinegar<\/h3>\n<h3>1 tablespoon soy sauce<\/h3>\n<h3>1 1\/2 teaspoon sugar<\/h3>\n<h3>Crushed red pepper flakes<\/h3>\n<h3>Mix these ingredients and set aside while the making the fritters.<\/h3>\n<p>&nbsp;<\/p>\n<h3>FRITTERS<\/h3>\n<h3>1 1\/2 pouunds zucchini, grated<\/h3>\n<h3>1\/2 teaspoon kosher salt plus more for cooking<\/h3>\n<h3>1 large egg<\/h3>\n<h3>1\/4 cup flour<\/h3>\n<h3>3 tablespoons fresh chives, chopped<\/h3>\n<h3>1 tablespoon cornstarch<\/h3>\n<h3>Freshly ground pepper<\/h3>\n<h3>1\/3 cup vegetable oil<\/h3>\n<p>&nbsp;<\/p>\n<h3><\/h3>\n<h3>Place grated zucchini in a colander in the sink, and toss with 1\/2 teaspoon salt. \u00a0Let stand 10 minutes, then wring zucchini dry in a clean kitchen towel. \u00a0 Place zucchini, egg, flour, chives, cornstarch, and pepper in a large bowl and mix gently. \u00a0Heat oil in large skillet over medium heat. \u00a0Drop 1\/4 cup of zucchini mixture into skillet, flattening slightly. \u00a0Cook till golden and crisp, about 3 minutes per side. \u00a0Transfer to a paper towel-lined plate, season with salt. \u00a0Serve with soy dipping sauce. \u00a0Fritters can be kept warm for up to 30 minutes in a 200 degree oven.<\/h3>\n<p><a href=\"https:\/\/www.facebook.com\/pages\/The-2-Seasons\/233957543322072\">Click here to like us on Facebook.<\/a><\/p>\n<p><a href=\"http:\/\/pinterest.com\/the2seasons\/\">Click here to follow us on Pinterest.\u00a0<\/a><\/p>\n<p>&nbsp;<\/p>\n<h3>Take care and have a great week-end.<\/h3>\n","protected":false},"excerpt":{"rendered":"<p>I was reading my latest issue of Bon Appetit magazine when I saw a recipe for zucchini fritters. \u00a0I had just purchased some fresh zucchinis at the farmers&#8217;
