{"id":15251,"date":"2013-01-10T17:47:07","date_gmt":"2013-01-10T22:47:07","guid":{"rendered":"http:\/\/the2seasons.com\/?p=15251"},"modified":"2014-07-02T13:11:32","modified_gmt":"2014-07-02T18:11:32","slug":"salad-perfection","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=15251","title":{"rendered":"Salad Perfection"},"content":{"rendered":"<h3><\/h3>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center;\">In <a title=\"A Winter Dinner Plus Giveaway\" href=\"http:\/\/the2seasons.com\/2013\/01\/09\/a-winter-dinner-plus-giveaway\/\">yesterday&#8217;s post<\/a>, I mentioned that I would be sharing a salad recipe with you today. \u00a0My friend, Randy, told me that her daughter-in-law made this salad for Thanksgiving. \u00a0It sounded really yummy, and so I had to give it a test drive. \u00a0Boy, am I glad. \u00a0It was one of the best salads ever. \u00a0It has more steps than most salads, but with the addition of grilled chicken, salmon, or shrimp, it would be a wonderful main course. \u00a0This recipe came from the Barefoot Contessa, as usual.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/the2seasons.com\/2013\/01\/10\/salad-perfection\/img_4213\/\" rel=\"attachment wp-att-15252\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-15252\" alt=\"\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/01\/IMG_4213-1024x681.jpg\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/01\/IMG_4213-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2013\/01\/IMG_4213-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/a><\/p>\n<ul>\n<li>\n<h3><span style=\"text-decoration: underline;\"><em>ROASTED BUTTERNUT SQUASH SALAD<\/em><\/span><\/h3>\n<\/li>\n<\/ul>\n<h3><em><span style=\"text-decoration: underline;\"><br \/>\n<\/span><\/em><\/h3>\n<ul>\n<li>\n<h3>1 (1 1\/2-pound) butternut squash, peeled and 3\/4-inch) diced<\/h3>\n<\/li>\n<li>\n<h3>Good olive oil<\/h3>\n<\/li>\n<li>\n<h3>1 tablespoon pure maple syrup<\/h3>\n<\/li>\n<li>\n<h3>Kosher salt and freshly ground black pepper<\/h3>\n<\/li>\n<li>\n<h3>3 tablespoons dried cranberries<\/h3>\n<\/li>\n<li>\n<h3>3\/4 cup apple cider or apple juice<\/h3>\n<\/li>\n<li>\n<h3>2 tablespoons cider vinegar<\/h3>\n<\/li>\n<li>\n<h3>2 tablespoons minced shallots<\/h3>\n<\/li>\n<li>\n<h3>2 teaspoons Dijon mustard<\/h3>\n<\/li>\n<li>\n<h3>4 ounces baby arugula, washed and spun dry<\/h3>\n<\/li>\n<li>\n<h3>1\/2 cup walnuts halves, toasted<\/h3>\n<\/li>\n<li>\n<h3>3\/4 cup freshly grated Parmesan<\/h3>\n<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<div>\n<h3>Preheat the oven to 400 degrees F.<\/h3>\n<h3>Place the butternut squash on a sheet pan. Add 2 tablespoons olive oil, the maple syrup, 1 teaspoon salt and 1\/2 teaspoon pepper and toss. Roast the squash for 15 to 20 minutes, turning once, until tender. Add the cranberries to the pan for the last 5 minutes.<\/h3>\n<h3>While the squash is roasting, combine the apple cider, vinegar, and shallots in a small saucepan and bring to a boil over medium-high heat. Cook for 6 to 8 minutes, until the cider is reduced to about 1\/4 cup.
