{"id":14881,"date":"2012-12-20T16:08:44","date_gmt":"2012-12-20T21:08:44","guid":{"rendered":"http:\/\/the2seasons.com\/?p=14881"},"modified":"2015-12-24T09:14:26","modified_gmt":"2015-12-24T14:14:26","slug":"berry-orange-coffee-cake","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=14881","title":{"rendered":"Berry-Orange Coffee Cake"},"content":{"rendered":"<h3 style=\"text-align: left;\">Today is bake day in these parts. \u00a0I&#8217;m doing as much ahead of time as possible and found a recipe to bake and freeze that will be great for a grab and go breakfast when we take Jordan and Yankee\u00a0to the airport for their flight to ski country. \u00a0Don&#8217;t worry. \u00a0We&#8217;ll get to spend four quality days together packed with activities before they go.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/the2seasons.com\/2012\/12\/20\/berry-orange-coffee-cake\/img_4062\/\" rel=\"attachment wp-att-14882\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-14882\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/12\/IMG_4062-1024x681.jpg\" alt=\"\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/12\/IMG_4062-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/12\/IMG_4062-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/a><\/p>\n<h3><span style=\"text-decoration: underline;\"><strong>BERRY-ORANGE COFFEE CAKE<\/strong><\/span><\/h3>\n<h3><\/h3>\n<h3>2 cups all-purpose flour<\/h3>\n<h3>1 1\/2 tsp. ground cinnamon<\/h3>\n<h3>1\/4 tsp. salt<\/h3>\n<h3>1\/2 tsp. baking soda<\/h3>\n<h3>1\/2 tsp. baking powder<\/h3>\n<h3>1\/3 cup butter, softened<\/h3>\n<h3>1\/2 cup brown sugar<\/h3>\n<h3>1\/2 cup granulated sugar<\/h3>\n<h3>1 cup whole milk ricotta cheese<\/h3>\n<h3>1 egg<\/h3>\n<h3>1 Tbsp. shredded orange peel<\/h3>\n<h3>1 Tbsp. orange juice<\/h3>\n<h3>1\/2 \u00a0tsp. vanilla<\/h3>\n<h3>1 1\/2 cups fresh cranberries, coarsely chopped<\/h3>\n<h3>1 recipe orange glaze (below)<\/h3>\n<h3>1\/2 cup walnuts, toasted and chopped (I used pecans)<\/h3>\n<h3>2 Tbsp. finely chopped crystallized ginger (I omitted this)<\/h3>\n<h3><\/h3>\n<h3>\u00a0&#8211; Preheat oven to 350. \u00a0Grease either muffin pans or mini loaf pans, which is what I used.<\/h3>\n<h3>\u00a0&#8211; Combine flour, cinnamon, baking soda, baking powder and salt in a bowl. \u00a0Whisk to blend.<\/h3>\n<h3>\u00a0&#8211; In another bowl beat butter and sugars till fluffy. \u00a0Beat in ricotta, egg, orange peel, orange juice, and vanilla. \u00a0Stir flour mixture in till combined. \u00a0Fold in cranberries and ginger.<\/h3>\n<h3>\u00a0&#8211;
