(The goat cheese tart and <a title=\"Orange Pound Cake Recipe\" href=\"http:\/\/the2seasons.com\/2012\/03\/15\/orange-pound-cake-recipe\/\">orange pound cake<\/a> are her recipes, too).<\/h3>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center\"><a href=\"http:\/\/the2seasons.com\/2012\/07\/05\/summer-is-for-gazpacho\/img_2696\/\" rel=\"attachment wp-att-11130\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-11130\" src=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/07\/IMG_2696-1024x681.jpg\" alt=\"\" width=\"614\" height=\"409\" srcset=\"http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/07\/IMG_2696-1024x681.jpg 1024w, http:\/\/the2seasons.com\/wp-content\/uploads\/2012\/07\/IMG_2696-430x286.jpg 430w\" sizes=\"(max-width: 614px) 100vw, 614px\" \/><\/a><\/p>\n<h3 style=\"text-align: left\"><span style=\"text-decoration: underline\">GAZPACHO<\/span><\/h3>\n<ul>\n<li>\n<h3>1 cucumber, halved and seeded, but not peeled<\/h3>\n<\/li>\n<li>\n<h3>2 red bell peppers, cored and seeded<\/h3>\n<\/li>\n<li>\n<h3>4 plum tomatoes<\/h3>\n<\/li>\n<li>\n<h3>1 red onion<\/h3>\n<\/li>\n<li>\n<h3>3 garlic cloves, minced<\/h3>\n<\/li>\n<li>\n<h3>23 ounces tomato juice (I used canned diced tomatoes instead)<\/h3>\n<\/li>\n<li>\n<h3>1\/4 cup white wine vinegar<\/h3>\n<\/li>\n<li>\n<h3>1\/4 cup good olive oil<\/h3>\n<\/li>\n<li>\n<h3>1\/2 tablespoon kosher salt<\/h3>\n<\/li>\n<li>\n<h3>1 teaspoons freshly ground black pepper<\/h3>\n<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<h3>\u00a0&#8211; Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor\u00a0fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess.<\/h3>\n<h3>\u00a0&#8211; After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving.
