{"id":11055,"date":"2012-06-28T20:11:41","date_gmt":"2012-06-29T01:11:41","guid":{"rendered":"http:\/\/the2seasons.com\/?p=11055"},"modified":"2012-06-29T11:55:24","modified_gmt":"2012-06-29T16:55:24","slug":"watermelon-mojitos","status":"publish","type":"post","link":"http:\/\/the2seasons.com\/?p=11055","title":{"rendered":"Watermelon Mojitos"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" src=\"http:\/\/www.barefootcontessa.com\/images\/left_pix\/recipes\/545_27%20watermelon%20mojitos.jpg\" alt=\"\" \/><\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: center;\">I love me some Barefoot Contessa. \u00a0She actually sent me an email once &#8211; a personal email. \u00a0A friend of mine was her editor at Clarkson Potter before she (my friend) became its V.P. \u00a0Anyway, she knows how crazy I am about Ina, and so she arranged it. \u00a0Ina was at her Paris apartment at the time, and it was Thanksgiving. \u00a0She wanted to cook a turkey, but she couldn&#8217;t find a turkey in all of Paris. \u00a0I guess being famous, rich, and a successful cookbook author means nothing in a city like Paris when you need to buy a turkey.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone\" src=\"http:\/\/2.bp.blogspot.com\/_u-KwVPpRbYg\/TCqqpkZ72PI\/AAAAAAAAJxs\/3sbvdqZVEak\/s1600\/Watermelon.jpg\" alt=\"\" width=\"423\" height=\"406\" \/><\/p>\n<h3 style=\"text-align: center;\">Since it is watermelon season and our nation&#8217;s birthday is next week, what better recipe to share than Ina&#8217;s watermelon mojitos? \u00a0It&#8217;s red, and pretty, and refreshing, and everything is in season.<\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3 style=\"text-align: left;\"><span style=\"text-decoration: underline;\">WATERMELON MOJITOS<\/span><\/h3>\n<h3 style=\"text-align: center;\"><\/h3>\n<ul>\n<li>\n<h3>30 large fresh mint leaves, coarsely torn by hand<\/h3>\n<\/li>\n<li>\n<h3>3 to 4 thick slices fresh watermelon<\/h3>\n<\/li>\n<li>\n<h3>12 ounces light rum, such as Bacardi<\/h3>\n<\/li>\n<li>\n<h3>1\/2 cup simple syrup<\/h3>\n<\/li>\n<li>\n<h3>6 tablespoons freshly squeezed lime juice (3 limes)<\/h3>\n<\/li>\n<li>\n<h3>Sprigs of mint and spears of watermelon, for serving<\/h3>\n<\/li>\n<\/ul>\n<div>\n<h3><\/h3>\n<h3>\u00a0&#8211; Smash the mint leaves. Remove and discard the rind and seeds of the watermelon. Put the fruit into a food processor\u00a0fitted with the steel blade and puree. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving.<\/h3>\n<h3>\u00a0&#8211; Place ice cubes in \u00a0glasses and pour the mojito mixture into the glasses. Garnish\u00a0with sprigs of fresh mint and spears of watermelon.
