Early last week I blogged about our Kentucky Derby party. \u00a0If you missed it, you can read about it here.<\/a>\u00a0 I made a variety of Kentucky favorites, one of them being \u00a0bourbon balls. \u00a0I had several requests for the recipe, so here it is. \u00a0You will be shocked how easy it is. \u00a0I found this recipe somewhere on the internet, but I do not remember which site. \u00a0I give my biggest apology to the genius who developed it because I cannot give you credit.<\/h3>\n

BOURBON BALLS<\/h3>\n

 <\/p>\n

1 stick of butter<\/h3>\n

1 lb. box powdered sugar<\/h3>\n

1 cup chopped pecans (I only used 1\/2 cup and I thought that was plenty)<\/h3>\n

Pecan halves for decoration (optional)<\/h3>\n

4 Tbsp. bourbon<\/h3>\n

4 oz. semi-sweet chocolate<\/h3>\n

4 oz. bittersweet chocolate<\/h3>\n

\u00a0– One day ahead: \u00a0Cream the butter and sugar. \u00a0Add the chopped pecans, mixing well. \u00a0Add the bourbon.<\/h3>\n

\u00a0– Shape into balls using 1 teaspoon of the mixture for each ball. \u00a0(You may need to let the batter sit in the fridge for an hour or two before you can easily roll it into balls.) \u00a0Refrigerate overnight.<\/h3>\n

\u00a0– Next day: Melt semi-sweet and bittersweet chocolate in a large bowl in the microwave or over a double boiler. \u00a0Put a toothpick in the balls and dip in chocolate and place on waxed paper. \u00a0Remove toothpick and put pecan half on top. \u00a0Refrigerate to harden. \u00a0Don’t eat too many at one time, if you know what I mean…….<\/h3>\n
