Here’s an easy recipe for microwave French toast in a cup.
Hello, everyone and happy Friday. We apologize for our absence this week, but I am having issues with my computer Apparently, my computer and our blog site have decided that they don’t like each other any more, and they won’t play nicely together. The blog site works fine on my husband’s computer, but the photos are on my computer. It also works fine or Jordan’s computer. I am at a loss as to how to deal with it, and I also don’t have the skills to deal with it. So, please be patient with us. I know in the whole scheme of things, this is small potatoes, but it is frustrating.
Today we have another pantry food recipe for you, and this is a fun one. I was actually looking for a microwave muffin in a cup recipe, and I stumbled across this one for French toast in a cup. I made it, and it was such a fun little treat that was so easy. I think you and your family will like it – especially the kids. They can help make this because it is quick and easy. French toast is one of my favorite breakfasts, and to think that I can make it without even heating up the grill makes me all kinds of happy.

- 1 to 2 slices of bread, cubed
- 1 egg
- 3 tablespoons milk
- Pinch of cinnamon
- Drop of vanilla extract
- Use any type of bread that you have and cut it into cubes. Fill a microwaveable cup with it.
- In a separate cup, mix egg, milk, cinnamon, and vanilla.
- Pour egg mixture over bread cubes. Let it sit a few minutes until the bread has soaked up the liquid.
- You might have to push the bread into the liquid with the back of a spoon.
- Microwave for 1 minute. Add 10 second increments until the egg mixture is thoroughly cooked. You don't want runny eggs.
- Top with maple syrup, chocolate chips, and/or whipped cream.

Cube the bread, and put it in a microwave safe cup.
Mix the eggs, etc in another cup.
Pour the egg mixture over the cubed bread. Use the back of a spoon to push the bread into the liquid so that it is all covered. Let the cup sit a few minutes while the bread absorbs the liquid.
Microwave the mixture for one minute. If it is not cooked through, continue to cook in 10 second increments until it is done. You don’t want runny eggs. Top with syrup, whipped cream, and/or chocolate chips. Eat, and enjoy!
We have had a cool but beautiful week here in Lexington, and I think it’s supposed to be a rainy weekend. I am just itching to get out and start my garden. Our closets have all been organized, the drawers are cleaned out, and now it’s time to turn my attention to the outdoors. Our lawn is looking good, and we have had some more plants added to our landscaping. I will show you all of that soon. The gas company is still working on the gas lines on our street. That has been going on for almost three months. They have dug up the pavement on the street in front of us and beside us three different times. I don’t think they are very efficient in their job planning. Oh well.
