Fresh Peach Salad Recipe

Last week my adorable daughter-in-law sent a photo to me of a salad she had made the night before for dinner.  It was a fresh peach salad, and she said that both she and our son Cory really enjoyed it.  She said that the recipe came from Gwyneth Paltrow’s blog but was developed by Cameron Diaz.  Who knew?????  Anyway, I liked the way the photo looked and decided to give it a test-drive. After one bite, I knew we had to share it with you.  Oh. My. Goodness.  It is so delicious.  You will definitely want to make this one.  In fact, my mouth is watering just thinking about it.


Peach Salad

4 peaches, pitted and sliced into wedges
8 oz. burrata or fresh mozzarella, torn into pieces (I used fresh mozzarella)
¼ cup small or torn basil leaves
¼ cup chopped toasted almonds (walnuts would be great, too)
Balsamic glaze* or vinegar, for drizzling
Extra virgin olive oil, for drizzling

On a large platter, arrange peaches and burrata. Top with basil and almonds; drizzle with balsamic and olive oil.


*NOTE: If you don’t have or can’t find balsamic glaze, simply cook balsamic vinegar in a small pot over medium heat until reduced by about half.


This salad would taste great with this chicken recipe.  I am taking it to my garden club’s annual picnic next week.  I can’t wait to share it with them.     I Have been make salads with peaches all summer. I grill mine,dice them with equal parts of watermelon. Add goat cheese and balsamic vinegar. Then I add some pistashio nuts. Mix lemon juice with some watermelon water. It is divine. But our peaches have been wonderful this summer.
