Mini-Applesauce Muffins

I’ve been on a muffin kick lately.  Thank goodness it is more muffin baking than muffin eating.  So, when I had a meeting at my house on a recent morning, I thought it was time to make some more muffins.  This time I went for applesauce muffins since I had just made some fresh applesauce the night before.

Applesauce muffins

I made little bite-size muffins that are just the cutest things.  And the best part is that they are dipped in a mixture of cinnamon and sugar while still warm.  Yum….The recipe is really simple (it’s from Taste of Home), and don’t worry… don have to make your own applesauce.

Applesauce Muffins

  • 1 cup butter, softened

  • 2 cups sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 2 cups applesauce

  • 4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground allspice

  • 1/4 teaspoon ground cloves

  • 1/2 cup sugar
    2 tablespoons cinnamon

  • Melted butter

  • In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Stir in applesauce. Combine the flour, baking soda and spices; stir into creamed mixture. Fold in nuts.

  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans. Dip the top in melted butter and then into a mixture of cinnamon and sugar.  Cool on a wire rack.

Yum! These look so good. I sort of wish fall weather would hurry up so I’ll feel like baking. Does fall weather ever come to GA?
