Paleo Strawberry/Lime Scones

I am so excited to share this recipe with you today.  Mr. Right loves strawberries, and since it is official strawberry season here in Kentucky right now, I decided to make him a special treat.  I searched the web for a paleo scone recipe and landed on this one at Baking With Balance.  Her recipe called for lemon, but since I only had a lime, that ‘s what I used.


 Strawberry Scones




1 1/2 cup almond flour (or meal)

1/2 teaspoon baking soda

1/4 teaspoon salt

Zest of 1 lime

1 egg

1 tablespoon coconut oil melted and cooled or 1 tablespoon olive oil

Paste from a vanilla bean (omit if you don’t have)

1 tablespoon lime juice

1/2 cup chopped strawberries

1 tablespoon honey

Heat the oven to 325 degrees.


Mix the first four ingredients in a large mixing bowl.  Combine the remaining wet ingredients in another bowl and then add to the dry ingredients.  Use an ice cream scoop to place dough onto a baking sheet topped with either parchment paper or a silpat.  Bake for 14 to 18 minutes.  Cool on a rack before serving.
