I received a book to review a while back but with work travels and other adventures, I am just now getting around to making a couple of its recipes. The book is Start Fresh by Tyler Florence.
We do not have any children at this point, but if I did, I think this book would be a must. It had a lot of healthy recipes for children. Actually, it has recipes for all ages even though the cover and title emphasize the little ones. Today I am going to share the recipe for a breakfast meal with you. I think your children will like it, and I know you will. It’s like banana French toast.
BANANA BREAKFAST SANDWICHES
Makes 2 Adult Servings or 4 Kid Servings
2 bananas, halved crosswise and then halved lengthwise
4 slices whole wheat or multigrain bread
1/2 cup whole milk (I used skim)
1/2 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
pinch of salt
1 tablespoon unsalted butter
2 tablespoons honey
1 teaspoon confectioners’ sugar
– Arrange the banana slices in a single layer on 2 of the bread slices. Top with the remaining bread slices.
– In a large bowl, combine the eggs, milk, vanilla, cinnamon, and salt to whisk to blend. Soak each sandwich in the egg mixture for a minute or two or until the bread is just saturated.
– Melt the butter in a large skillet over medium heat. Place the sandwiches in the pan and cook until the bottoms are golden, 2 to 3 minutes. Flip the sandwiches, place a heavy pan on top of the sandwiches to press them and cook until crisp and golden, 2 to 3 minutes.
– Cut each sandwich into quarters and serve warm with a drizzle of honey and shake of confectioners’ sugar.
